Franconian Feuerspatzen: Juicy quark balls based on grandma's recipe

Do you know fire sparrows? The little quark balls are a real poem and are particularly popular during the fifth season. The recipe is here.

Hardly a visit to the bakery goes by without me getting stuck on the delicious quark balls - fluffy, soft, sweet and so quickly eaten. Simply irresistible! Especially now that the new year is beginning and carnival (or carnival) is just around the corner, my desire for these heavenly pastries is increasing even more.

Luckily, I have a simple recipe for fire sparrows that allows me to easily conjure up the sweet dough balls myself. Particularly practical: The list of ingredients is manageable and consists of basics that you almost always have in the house - flour, eggs, sugar and baking powder. With a little powdered sugar for dusting and a small dash of rum, which gives the dough a subtle depth, nothing stands in the way of enjoyment.

Super easy recipe for fire sparrows

If you want to prepare the recipe alcohol-free, that's no problem, just leave out the rum. Optionally, you can also add raisins or sultanas to the dough or mix some cinnamon with powdered sugar for dusting - so delicious!

You need the ingredients:

  • 500 g Quark
  • 500 g Flour
  • 5 eggs (size M)
  • 175g sugar
  • 1 pinch of salt
  • 2 packs of vanilla sugar
  • 1 pack of baking powder
  • 1 tbsp rum, brown
  • Powdered sugar for dusting
  • fat, e.g. B. clarified butter, for deep-frying

And this is how it works:

1. In a large bowl, mix eggs, sugar and vanilla sugar until fluffy. Then add the curd and rum and stir until smooth. Gradually fold in the flour, salt and baking powder.

2. Heat the fat in a large pot to approx. 170 degrees (use a kitchen thermometer to check, for example,buy here on Amazon*). Use a tablespoon to cut pieces out of the dough, place them in the fat and deep-fry for about 3-4 minutes until golden brown.

3. Remove the fire sparrows with a slotted spoon and drain them on crepe paper. Dust the lukewarm pastry with plenty of powdered sugar. Enjoy it!
