You know that: you're at a party, champagne is being served, everyone is having a lively conversation - and everyone's really buzzing. This is particularly unpleasant when it takes a long time before you actually eat.
So that your guests don't starve next time, you should serve a few appetizers. It's best if they're as easy to eat as possible, because no one will sit down at first. We'll introduce you to three snack ideas that taste really good, but aren't complicated at all.

#1 Crispy scampi in a basil brick dough coating
Our little scampi packets look great and are really crispy. What initially sounds quite complicated from the name is actually very simple and very quick.

You need:
- 24 large scampi
- 12 sheets of brick dough
- 1 bunch of basil
- Salt, pepper
- oil
Here's how:
1. Peel the raw scampi tails carefully. Season lightly with salt and pepper. Pluck 24 basil leaves. Cut each sheet of brick dough in half.
2. Place a scampi and a basil leaf on each dough semicircle, roll it up and fold the edges into the middle so that it holds better.
3. Pin or tie each roll together with a toothpick. If this is a bit difficult for you, a second pair of hands is very helpful.
4. Heat some olive oil in a pan and fry the scampi morsels for 3-5 minutes until they get a nice golden yellow color. Serve with a dip.

#2 Puff pastry canapés with salmon cream
A salmon cream like this somehow has a certain flair of elegance or decadence, don't you think? Luckily, a little luxury doesn't have to be complicated. Even those who don't like cooking can safely prepare our canapés.

You need:
- 200 g of finished puff pastry
- 150 g cream cheese
- 150 g smoked salmon
- 2 tbsp chopped chives
- Optional: 300 g sliced mushrooms
Here's how:
1. Preheat oven to 150°C. Let the puff pastry sit at room temperature for a few minutes. Meanwhile, chop the smoked salmon.
2. Cut four dough circles, each 8 cm in diameter, from the puff pastry. This works great with biscuit molds, for example (is available here on Amazon*).
3. Place the dough circles between two sheets of baking paper on the baking tray, cover with a second baking tray and bake in the oven for about 30 minutes. Let cool at room temperature.
4. In the meantime, mix the cream cheese with the smoked salmon and spread it over the finished baked puff pastry circles. Leave approx. 5 mm free at the edge so that the canapé is easier to grip.
5. If you want, you can now place the mushroom slices on top in a rosette shape and overlap them slightly. Sprinkle with chopped chives and arrange on a platter.

#3 Goat Cheese and Ham Bites
We all know and love pizza rolls. But what if we give the party classic a little upgrade? The rolls taste incredibly sophisticated, but are still very easy to prepare.

You need:
- 1 pack of puff or pizza dough
- 50 g goat's cream cheese
- Herbs of Provence
- Antipasti Tomatoes
- Ham cubes
Here's how:
1. Cut the tomatoes into small pieces. Then mash the goat cheese with a fork and mix it with the herbs, tomatoes and ham.
2. Roll out the puff pastry or pizza dough and spread the topping on it. Then roll up from the long side.
3. Place the roll of dough in the refrigerator for 5 minutes and then cut it into slices.
4. Place the snails on a baking tray lined with baking paper and bake in the oven for about 10 minutes until golden.
5. Allow to cool slightly and place on a serving plate. If you like, you can drizzle some honey over it.
