Since 1999, Swedes have celebrated Cinnamon Roll Day (Swedish Kanelbullens dag) on October 4th. On this day, the sweet smell of cinnamon and sugar is in the air, and around 8 million pieces of the sweet pastry are eaten.
However, Kanelbullar has only been around since the 1920s. Ingredients such as sugar, cinnamon and butter became affordable for the general population after the First World War. Cinnamon rolls are also a relatively recent invention.
Children love them for breakfast with a glass of milk. For adults, it is a must for the traditional coffee break, Fika. It is a social institution in Sweden: ever since coffee houses appeared all over the country in the 19th century, work colleagues, friends and family have met for a break. They traditionally take a break from everyday life with a cozy chat with coffee and a kanelbullar.

Original recipe for Kanelbullar from Sweden
Ingredients for 25 Kanelbullar
For the dough:
- 35g yeast
- 100g sugar
- 300 ml milk
- 1 No
- 120 g Butter
- 1 teaspoon salt
- 1 tablespoon ground cardamom
- 750 g wheat flour
For the filling:
- 100 g soft butter
- 50g sugar
- 2 tablespoons cinnamon
For the glaze:
- 1 No
- 2 tablespoons water
- powdered sugar
A little tip before you start preparing the yeast dough: it works best when all the ingredients are at the same temperature. Therefore, take the milk and the egg out of the refrigerator in good time.

This is how it is prepared:
1.First, crumble the yeast into a bowl and pour the lukewarm milk over it. Now add the remaining ingredients and knead everything vigorously for 10 minutes.
2.Now the dough has to rise for half an hour. It's best to cover it with a tea towel and put it in a warm place.
3.In the next step, the yeast dough is rolled out to around 30 centimeters wide. The dough should be approximately 3 millimeters thick.
4.For the filling, spread soft butter on the dough sheet and sprinkle sugar and cinnamon over it.
5.Now the cinnamon rolls get their characteristic shape. To do this, roll up the dough lengthways and cut off about 25 pieces.
6.Now place the raw cinnamon rolls on a tray lined with baking paper. Now the snails have to rest covered again until their volume has doubled.
7.To make the icing, mix powdered sugar, water and the egg into a thick paste.
8.Brush the top of the cinnamon rolls with the icing and then bake them in the oven at 220 degrees for 5 to 6 minutes.
9.Then let the sweet delicacies cool on a rack.
