This soup recipe is a real soul warmer. Wonderfully creamy, wonderfully flavorful and easy to prepare, this potato soup puts a smile on our faces even on the nastiest of days.
No matter whether it's a bad day or simply bad weather: Whenever I'm not feeling too well, my favorite dish from childhood helps me out.
A super creamy and delicious potato soup just like grandma made. It is a real comfort food and after one spoonful everything is half as bad.

The potato soup has four advantages: It is easy to prepare and you don't have to stand at the stove. The ingredients are cheap. You can pre-cook a large quantity and freeze the rest. And finally, the soul-warming soup keeps you full for a long time. So it’s a double win-win situation.
Ingredients:
- 1 kg potatoes (cooking until floury)
- 1 pack of soup vegetables (fresh)
- 2 large carrots
- 1 large onion
- 1 shot of white wine (optional)
- 5 teaspoons granulated vegetable broth
- 1 cup of sour cream
- some oil
- Pepper, salt, nutmeg
Preparation:
1.Peel the potatoes and cut them into rough pieces. Wash and clean the soup vegetables and also cut them into coarse pieces. Tip: If you want to save time, you can also use frozen soup vegetables. The soup will then have a slightly less spicy taste and can be seasoned later.
2.Now add some oil to a large pot and heat over medium heat. Sauté the onion cubes until translucent. In the meantime, fill the kettle with plenty of water and switch it on.
3.Add the potatoes and soup vegetables to the diced onions in the pot and sauté for 2-3 minutes. Now deglaze with white wine. Tip: If you are cooking for children, simply leave out the white wine!

4.Pour about a liter of boiled water into the pot, add 5 teaspoons of vegetable stock powder and mix everything well. Now put the lid on the pot and simmer the potato soup on a medium heat for 30-40 minutes until the vegetables are soft.
5.If the potatoes and carrots can be mashed with a fork, the vegetables are cooked. Now mix the soup with a hand blender into a creamy cream. Important: Do not puree for too long, otherwise the consistency will become paste-like.
If the potato soup is too thick, simply mix a little more broth according to the instructions on the package and add it. Stir in half of the sour cream and season with salt, pepper and nutmeg.
6.Pour the potato soup into the soup bowls and serve with a dollop of the remaining sour cream and some freshly ground pepper. Various toppings also go wonderfully with this.
Pimp potato soup with toppings
The creamy potato soup becomes a real treat if you top it at the end. My favorite topping is crispy pepper slices. Simply cut the sausages into slices and fry them in the pan until crispy without adding any fat. They give the soup a wonderfully spicy note.
Also super delicious: crispy garlic croutons. To do this, cut a baked flatbread into approx. 1 cm cubes, place in a bowl and mix with a tablespoon of olive oil and a teaspoon of garlic powder. Then bake in a preheated oven at 180 degrees for 5-8 minutes until crispy.
