Fancy Mediterranean lightness in winter? Then try our recipe for salmon with basil and oven-roasted vegetables.

When it's gray and cold outside, we all like to dream back to summer, right? With this recipe for salmon with basil and fresh vegetables we bring Mediterranean flavors straight to the plate. And after all the heavy holiday meals in December, it feels really good to eat something light and healthy again.

Today we're combining salmon for valuable protein, while peppers, tomatoes and basil will finally banish the winter blues. And best of all, with this recipe the oven does most of the work.

Recipe for oven-baked salmon with peppers and tomatoes

Ingredients for 1 serving:

  • 200 g ripe tomatoes
  • 150 g yellow peppers
  • 125 g Lachsfilet
  • some lemon juice
  • some dried basil
  • Salt, pepper
  • some basil leaves

Preparation:

1. Wash and dice the tomatoes, wash, core and dice the peppers. Drizzle salmon fillet with lemon juice, rub with dried basil and place in a small ovenproof dish.

2. Distribute vegetables on and around the fish, season with salt and pepper. Cook in a preheated oven (200 degrees) for 25 to 30 minutes. Sprinkle with fresh basil. Bon appetit!
