Lasagna, spaghetti Bolognese... The combination of minced meat and tomatoes is simply unbeatable and is such a popular classic for a reason. But have you ever had the hacked one?inthe tomatoes stuffed?
Baked with cheese and Mediterranean herbs, it becomes a heavenly oven dish that provides variety for dinner.
This goes well with rice, baguette or pasta. Without it, the oven-baked tomatoes become a delicious low-carb recipe.

Recipe for scalloped tomatoes with minced meat
Ingredients for 2-3 servings:
- 6 beefsteak tomatoes
- 1 onion
- 1 clove of garlic
- 400 g minced meat
- 1 tbsp tomato paste
- 2 tablespoons oil for frying + oil for the mold
- 100g grated Gouda
- Salt and pepper
- 1/2 bunch of basil
- 1 teaspoon dried oregano
- 1 teaspoon paprika, sweet
- 500 ml vegetable broth (hot)
And this is how it works:
1. First wash the tomatoes, then cut off the “lid” and hollow out the tomatoes. Dice the core. Peel the onion and cut it into fine cubes. Pass the garlic through a garlic press. Wash the basil, shake dry and chop roughly.
2. Heat oil in a deep pan. Fry the onions and mince for 3-4 minutes. Then add the garlic. Season everything with salt, pepper, oregano and paprika. When the minced meat is crumbly, stir in the tomato paste and the core of the tomatoes. Simmer for another 4-5 minutes.
3. In the meantime, preheat the oven to 200 degrees top/bottom heat. Rub a baking dish with a little oil.
4. Now fold half of the cheese and the basil leaves into the minced meat mixture. Place the tomatoes in the baking dish and fill them with the minced meat and sprinkle with the remaining cheese. Finally, pour the hot vegetable broth (2 teaspoons of vegetable broth to 500 ml of water) into the mold and bake the whole thing for about 20 minutes.
