Do you want to start the first day of the year with a delicious cake? What would be better than the New Year's cake, also known as Hippe.
Have you ever tried New Year's cake? This dessert is a specialty that is mainly enjoyed in East Frisia. Traditionally, the New Year's cake is baked at the turn of the year and then offered to visitors to wish them a happy new year.
The New Year's cake, which is also called Hippe, Neejahrskoken or Rullerkes, can of course be baked all year round. Because the croissants are a super tasty accompaniment to coffee or tea that you should definitely try.

New Year's cake: simple recipe for hip people
New Year's cakes are wafer-thin waffles that are first baked and then quickly formed into croissants or rolls. The dough tastes wonderfully sweet and has a wintery note thanks to spices such as anise and cardamom. The crispy New Year's cakes can also be filled with cream before serving, but this is not a must.
Important: You absolutely need a croissant maker for this recipe. For example, you can find a good and cheap devicehere on Amazon.*
You need these ingredients:
- 375 g rock candy sugar
- 750 ml water
- 250 g Butter
- 3 Owner
- 500 g Flour
- 2 TL Cardamom
- 1.5 tsp cinnamon
- 0.5 tsp salt
- 0,5 Pck. Anis
- optional: spray cream
And this is how it is prepared:
1.Put the rock sugar in a bowl, pour the warm water over it and wait until the sugar has dissolved. Put the butter and eggs in a bowl and beat with a hand mixer until fluffy.
2.Gradually add the cooled rock candy water and the flour alternately to the butter-egg mixture and stir in carefully.
3.Now add the cardamom, cinnamon, salt and anise and stir the spices well into the dough. If the dough thickens, you can make it more liquid again with a little warm water.
4.Now pour the dough thinly into the croissant maker and bake. While still hot, form into a piping bag. You should be quick here, because after just a few seconds the dough can no longer be shaped.
You can then eat the croissants plain. However, it also tastes particularly delicious if you fill it with cream before serving. Bon appetit!
