Simple recipe for an emergency cake
Ingredients for a small baking pan (20 x 20 cm):
- 250 g flour (type 405 or 550)
- 2.5 tsp baking powder
- ½ teaspoon salt
- 200 g of sugar
- ½ tbsp vanilla extract (Buy here at Amazon*)
- 60 ml neutral vegetable oil
- 250 ml of water
This is how it works:
1. Preheat the oven to 175 ° C top/bottom heat. A baking pan (20 x 20 cm,Like this from Amazon*) Line with baking paper.
2. First mix the dry ingredients: Put the flour, baking powder, salt and sugar in a large bowl and stir well with a whisk.
3. Then incorporate the liquid ingredients: add the vanilla extract, oil and half of the water to the flour mixture and stir until there are no lumps. Then add the remaining water and stir into a smooth dough.
4. Put the finished dough in the prepared shape and bake for about 35–40 minutes until the cake is slightly browned and a toothpick comes out clean. Should it become too dark in between, cover the cake with aluminum foil.
5. Let the cake completely cool in the mold before you cut it. Then you can pimp him up at will: for example with powdered sugar, a simple sugar glaze made of lemon juice and water or with melted chocolate.
