Here is an easy recipe for a Greek yogurt dip with cucumber, garlic and dill, also known as tzatziki:
- 1 cup Greek yogurt
- 1/2 cucumber, peeled, seeded and finely diced
- 2 cloves of garlic, pressed
- 1 tablespoon fresh dill, finely chopped
- 1 tablespoon olive oil
- 1 teaspoon lemon juice
- Salt and pepper to taste
1. Stir the Greek yogurt in a bowl until smooth.
2. Finely dice the peeled cucumber and squeeze with a kitchen towel or paper towel to remove excess liquid.
3. Add the diced cucumber, pressed garlic and chopped dill to the yogurt and mix well.
4. Add olive oil and lemon juice and mix well again.
5. Season the tzatziki dip with salt and pepper to taste.
6. Let the dip sit in the fridge for at least 30 minutes to combine the flavors.
7. Garnish with a drizzle of olive oil and fresh dill before serving.
