Recipe for a quiche with potato floor
Ingredients for 1 quiche (approx. 24 cm diameter):
- 5 medium -sized cooked potatoes (gladly from the previous day)
- 1 tablespoon of olive oil
- Salt & pepper
- 100 g Speckwürfel
- 1 small onion, rolled
- 3 owner
- 125 ml milk or cream
- 1 handful of grated cheese (e.g. Emmentaler or Gruyère)
- nutmeg
This is how it works:
1. Preheat the oven to 200 ° C (top/bottom heat).
2. Put the boiled potatoes in a baking dish (either grease or layer with baking paper) and crush it with the underside of a glass or a cup so that a floor with a light bound is created. Drizzle with olive oil and season with salt & pepper.
3. Fry the bacon cubes in a pan crispy, then add the onion cubes and sweat briefly.
4. Spread the bacon onion mixture on the potato floor.
5. Whisk the eggs with milk or cream, season with salt, pepper and a pinch of nutmeg and pour over the potato-bacon layer.
6. Sprinkle grated cheese over it and bake the quiche for about 25 - 30 minutes in the oven until golden brown.
This is how you change the potato quiche
Spinat & feta:Instead of bacon and onions, diced feta and a handful of fresh spinach are coming into the quiche-a brilliantly delicious combination!
Paprika & Mushrooms:For a colorful, vegetarian version, fry simply diced peppers and mushrooms and use it instead of bacon.
Broccoli & Salmon:Put cooked broccoli and smoked salmon in the quiche - sometimes something different and really tasty.
