Our low-carb pancakes succeed without flour, but with curd and vanilla pudding powder. There is the recipe here.
What kind of pancakes do you like best, the wafer thin people that are reminiscent of crepes, or the fluffy American pancakes? I like both, but the thin pancakes have a very special place in my heart.
I lived in the Netherlands for eight years, and if the Dutch love something, then they are Pannenkoeken! There are even entire restaurants in which only these thin pancakes are served - sweet and hearty.

Admittedly, pancakes are not necessarily one of the healthiest foods and are probably not for fitness enthusiasts and people who want to reduce weight. How good that the delicious pancakes are also available in a low-carb variant!
The delicious low-carb crepes have significantly fewer carbohydrates and calories than normal. In terms of taste, however, they are still heavenly tasty. You can find the exact nutritional information per piece under the recipe.
Recipe for delicious pancakes without flour
Ingredients for approx. 8 pieces:
- 4 Owner (gr. M)
- 60 ml milk
- 200 g of lean curd
- 2 heaped El vanilla pudding powder
- 1 tablespoon of birch sugar
- 1 pinch of salt
- Some sunflower oil or butter lard to roast
And this is how it works:
1. Put all the ingredients in a bowl and stir into a smooth dough with a whisk.
2. A little clarified butter or sunflower oil in a coated pan (Like this from Amazon*) heat. Add the dough in portions and bake until golden brown on both sides.
3. Enjoy the low-carb pancakes warm. They taste pure or with powdered sugar, a pinch of cinnamon, jam or fresh berries.
With 8 pieces, 1 pancake contains approximately:
- 85 kcal
- 7 g Protein
- 7 g Kocenthydrate
For comparison: a normal, sweet pancake has approx. 150 calories and approx. 10 g of carbohydrates each.
