When the clock strikes midnight on New Year's Eve, the New Year is often welcomed with one - or several - glasses of champagne. For many people, the sparkling drink is simply part of New Year's Eve.
But some people can't do anything with sparkling wine. I, for example, was not a fan of the fizzy wine drink at all. Until I simply used it in a delicious cake. What sounds strange not only tastes incredibly good, but is also a real New Year's Eve hit to surprise your guests with a great New Year's dessert. You can find the simple recipe here.
Champagne cake: simple recipe
Our sparkling champagne cake impresses with a fruity cream and a loose base. The peaches round off the special dessert and make it extra juicy. The champagne sponge cake not only tastes exciting and fantastic, it is also very easy to make. It is therefore also suitable for preparing as a last-minute recipe on the evening before New Year's Eve.
You need these ingredients:
- 3 Owner
- 150g sugar
- 200 g ground almonds
- some baking powder
- 1 can of peaches
- 1 Pck. Dr. Oetker Aranca (here on Amazon)*
- 200 ml sparkling wine
- 500 ml Sahne
- 2 Pck. Sahnesteif
- 1 pack vanilla sugar
And this is how the preparation works:
1.Place eggs and sugar in a bowl and beat with a hand mixer until fluffy. Add the ground almonds and baking powder and stir.
2.Line a springform pan with baking paper or grease it generously. Pour the dough into the springform pan and smooth it out. The dough now goes into the preheated oven and is bakedBaked at 175 °C for about 20 minutes.

Remove the peaches from the can and cut them into wedges. Then cover the cooled base with the wedges. Leave a few peach wedges to garnish the cake later.
4.Dr. Pour Oetker Aranca pudding in apricot-passionfruit flavor into a bowl and add the sparkling wine. Beat with a mixer.
5.Put the cream, cream stiffener and vanilla sugar in a separate bowl and beat until stiff. When the cream is stiff, fold it into the champagne cream.
6.Spread the champagne and cream mixture over the peaches. Finally, decorate with the peach wedges and ideally keep the cake in the cold overnight.
