This speculoos apple cake is perfect for the cold season. Delicate sponge cake base, fruity apple compote, a creamy yoghurt cream layer and crispy speculoos biscuits on top - piece by piece a winter dream!

Recipe for delicious speculoos apple slices

Ingredients:

  • 3 Owner (M)
  • Salt
  • 280g sugar
  • 125 g Flour
  • 1 tsp baking powder
  • 1 kg tart apples
  • 250 ml apple juice
  • 1 tsp cinnamon
  • 40 g cornstarch
  • 6 sheets of gelatin
  • 500 g Greek yogurt (10% fat)
  • 400 g whipped cream
  • 275 g speculative biscuit

Preparation:

1. Grease pan (buy here on Amazon*) Line the oven with baking paper. Beat eggs, 1 pinch of salt and 125 g sugar for at least 5 minutes until thick and creamy. Mix flour and baking powder, sift over and fold in. Pour the sponge cake mixture into the drip pan and spread it evenly. Bake in a preheated oven (electric stove: 200 °C, fan oven: 180 °C, gas: level 3) for about 10 minutes. Remove and let cool.

2. For the apple compote, peel, quarter, core and slice the apples. Cover and bring 150 ml of juice with cinnamon and apple pieces to the boil and simmer for about 5 minutes. Mix starch with 80 g sugar, stir with 100 ml juice until smooth. Stir the mixed starch into the apple mixture and simmer for about 1 minute. While the apple mixture is still hot, spread it over the sponge cake and refrigerate for about 1 hour.

3. For the cream, soak gelatine in cold water. Mix yoghurt and 75 g sugar. Beat the cream until stiff. Squeeze out the gelatine and dissolve it. Stir some yoghurt into the gelatine, then stir everything into the remaining yoghurt. Fold in the cream in 2 portions.

4. Pour the cream onto the apples and smooth it out. Place speculoos biscuits on top close together. Chill for at least 2 hours. To serve, cut into pieces along the biscuits.
