Heavenly apple cake like Grandma's: This is how you bake Szarlotka - super juicy

Apple pie always works, right? Especially when it's as heavenly delicious as this one! Today I'm sharing with you an apple pie recipe that has been passed down in my family for ages.

This cake is a real Polish tradition that has been baked in my family for generations - and you should definitely try it! With its caramelizing apple filling, surrounded by crispy shortcrust pastry and a hint of cinnamon, it is a real poem and not without reason one of the most popular cakes in Poland for afternoon coffee.

Recipe for a heavenly apple pie

You need these ingredients for a loaf tin (23×23 cm):

For the shortcrust pastry

  • 300 g Flour
  • 100g sugar
  • 1 tbsp vanilla sugar
  • 1 tsp baking powder
  • 1 egg (size M)
  • 250 g kalte Butter

For the apple filling

  • 1.5 kg apples
  • 80 – 100g sugar
  • 1 tsp cinnamon

Besides that

  • 1 tbsp breadcrumbs
  • powdered sugar

And this is how the preparation works:

1. In the first step, sift the flour with the baking powder. Add sugar, vanilla sugar, diced butter and the egg and knead into a dough. Form into a ball, flatten slightly and wrap in cling film. Then put it in the freezer for about 30-40 minutes.

2. In the meantime, prepare the apple filling. To do this, peel the apples and cut them into small cubes. Place in a pan with cinnamon and sugar. Let simmer on low heat for about 15 minutes.

3. Preheat the oven to 180 degrees top/bottom heat. Line a baking pan with baking paper. I always use a square shape, like my grandma did. But you can also use a round springform pan.

4. Take the dough out of the freezer. Cut half of it into slices and line the bottom of the baking pan with it. Press down well with your hands and sprinkle with breadcrumbs.

5. Now spread the caramelized apples on top and smooth them out. Then tear the other half of the dough into small pieces and distribute evenly over the filling. Put the cake in the oven for about 50 minutes until it is golden brown. Dust with powdered sugar to serve.
