First in the video: What should you consider when freezing zucchini?
Would you like a quick lunch or dinner? Then you definitely have to try these delicious zucchini and potato pancakes.
Crispy fried rösti, potato pancakes or potato pancakes are guaranteed to be tasty for the whole family. If they also contain a few hidden vegetables, they are the perfect after-work meal - and even the biggest vegetable refuser will enjoy them!
Simple recipe for potato rösti with zucchini
Of course, the zucchini pancakes taste best fresh and warm. You can also let them cool down and take them to the office for lunch, for example.
Ingredients for approx. 4 servings:
- 500 g potatoes, mainly waxy
- 300 g Zucchini
- 1 onion
- 3 eggs (size M)
- 4 EL MEHL
- Salt and pepper
- oil for frying
And the zucchini rösti are so easy:
1. Peel the potatoes, peel off the onions, wash and dry the zucchini. Then grate all three ingredients finely (this works super quickly with a food processor,buy here on Amazon*).
2. Sprinkle the vegetables with half a teaspoon of salt and let them steep for about 5 minutes. Then pour it into a clean kitchen towel and squeeze out the resulting liquid vigorously.
3. Then put the grated vegetables in a large bowl, add eggs and flour and mix everything well. Season with salt and pepper.
4. Heat some oil in a pan. Then add 1-2 tablespoons of the mixture per buffer and flatten slightly. Fry until golden brown on both sides.
