Super aromatic, really tasty and full of vitamins and nutrients – we love raspberries! With their sweet and slightly sour aroma, the small, red fruits give numerous dishes a particularly fruity note. Whether fresh as a small snack, a raspberry cake or even ice cream - raspberries are always a pleasure! With raspberry season in full swing, we naturally want to prepare as many delicacies as possible with them. The only downside? We barely bought them and they went bad after what felt like 10 minutes. Okay, so how can we preserve raspberries and what is the best way to store them? With our tips andTricks remain the fruitsfresh and juicy for longer!
Similar to raspberrieslike strawberries and blueberriesIf picked at the peak of ripeness, they have a short shelf life. The small fruits usually stay fresh in the refrigerator for 1-2 days and then quickly become rotten and bad. A tried and tested home remedy and for us personally the best method (we tested it ourselves) for preserving raspberries is apple cider vinegar. The acid it contains extends its lifespan by several days, which means you have more time to prepare delicious raspberry cocktails and cakes. And this is how your raspberries stay fresh longer:
- 60 ml vinegar
- 180ml water
- Raspberries
Preserving raspberries with vinegar:
- First, check the container and sort out the crushed or rotten fruits.
- Mix vinegar and water in a bowl. If you don't have vinegar on hand, you can simply heat water to 50 degrees and use that.
- Gently soak the raspberries in the vinegar solution for 10-20 seconds.
- Remove the fruit from the bowl and carefully pat dry with kitchen paper. Before storing the raspberries in the refrigerator, make sure they are completely dry.
- Line a shallow container with kitchen towel and store the raspberries in it.
- And that's it - it's that easy to preserve fresh raspberries.
How to wash raspberries?
In order to preserve fresh raspberries, there are a few things to consider when washing them. Since the berries are very sensitive to pressure, you should do this very carefully. If possible, you could even avoid washing completely, as this significantly dilutes the flavor and the fruit is no longer as aromatic. And here's another small and very important note - you should always wash raspberries just before eating them. The excess water and moisture causes mold pores to grow even faster and the berries become rotten. However, if the berries are too dirty, then wash them in the following way.
- Fill a large bowl with cold water.
- Place the raspberries in a large sieve and submerge them in the bowl for 20-30 seconds.
- Then let the raspberries dry completely first in the sieve and then on kitchen paper and store in the refrigerator.
Preserve raspberries and store them properly
In order to preserve fresh raspberries, we obviously have to store them correctly. Contrary to popular belief, an airtight container would not be the best possible choice for this. Have you noticed that the berries are sold in containers with small holes? There is a reason for that too. To stay fresh and edible, the fruit needs some air circulation. To absorb excess moisture and prevent mold from forming, line the container with paper towels. Raspberries remain juiciest at a temperature of up to 10 degrees. Therefore, the refrigerator is the optimal place for storage. However, make sure that you store the fruits individually and not in close proximity to other fruits and vegetables. The gases released actually significantly shorten the shelf life of the berries.
If in doubt: freeze raspberries
Are you happy about a bountiful harvest or have you bought too many raspberries than you can use? In this case, we would recommend that you freeze the raspberries - this way they will last for at least 1 year. After defrosting, the small fruits are mushy, but can still be used in baking, smoothies,Sommer-Cocktailsor used with yogurt for breakfast. This is how easy it is to freeze raspberries:
- First wash the raspberries as described above and let them dry completely.
- Depending on how many raspberries you want to freeze, line a flat plate or baking sheet with baking paper.
- Place the fruits one by one next to each other, making sure that they do not stick.
- Place the plate straight in the freezer.
- Once the raspberries are frozen, you can store them in a freezer bag or airtight container in the freezer.
