Apple-banana muffins from the hot air fryer: Delicious recipe for juicy breakfast muffins that will melt away!

These apple and banana muffins are light, fluffy and with a hint of cinnamon - perfect for breakfast or as asmall snack to take away! And the best part? If you like, you can bake the muffins in the hot air fryer or in the oven! Sounds great, right?

Ingredients

  • 75 grams butter, at room temperature
  • 115 grams of maple syrup
  • 240 grams whole wheat flour
  • 60 grams of Greek yogurt
  • 60 ml milk
  • 2 Owner
  • 3 ripe bananas
  • 1 large apple
  • 1 tsp cinnamon
  • 1 TL Vanilleextrakt
  • 1 tsp baking powder

preparation

  • Preheat the air fryer to 200 degrees and spray 12 silicone molds with non-stick cooking spray.
  • Place butter in a small bowl and melt in the microwave.
  • Mash the bananas with a fork in a large bowl.
  • Add honey, eggs, yogurt, milk and vanilla extract to the bowl and stir with a whisk until smooth.
  • Add whole wheat flour, baking powder and cinnamon and mix into a smooth dough.
  • Finely grate the apple and fold it into the dough.
  • Pour the batter into the muffin tins and place in the air fryer basket.
  • Bake for 3 minutes, then reduce the temperature to 180 degrees and bake for another 10-12 minutes. Do a stick test.
  • Alternatively, you can bake the apple and banana muffins in the oven at 180 degrees for 20-25 minutes.

Refine the recipe

Our apple and banana muffins taste just as delicious, but you can refine the recipe to your heart's content and experiment with the ingredients. Here are a few suggestions that we would also like to try.

  • Add some chopped walnuts or other nuts of your choice to the dough.
  • If you like it more chocolatey, you can add cocoa powder or add chocolate pieces to the muffins.
  • Dried fruits such as raisins or dates would also go perfectly with the apple and banana muffins.
  • To make the muffins vegan, skip the eggs and butter and use coconut oil and vegan “flaxseed eggs” instead.
  • For a little protein kick, bake the muffins with 200 grams of wholemeal flour and 30 grams of protein powder with a flavor of your choice.
