Ingredients:
- 160 g Allzweckmehl
- 1 1/2 tsp baking powder
- 1 1/2 tsp ground cinnamon
- 1 tbsp granulated sugar
- 1/2 tsp salt
- 4 tablespoons butter, plus more for cooking
- 1 large egg
- 1 TL reiner Vanilleextrakt
- 300 ml milk
- 4 large apples, peeled, cored and finely chopped (about 5-6 cups)
- 100g brown sugar
Preparation:
- Mix the flour, baking powder, 1 teaspoon cinnamon, sugar and salt in a medium bowl. Melt 2 tablespoons butter and, in a large bowl, whisk together the egg yolks, vanilla, milk, and melted butter. Gently fold the dry ingredients into the wet ingredients until just combined, then fold in 1 1/2 cups chopped apples.
- In another medium bowl, beat the egg whites with a hand mixer until stiff peaks form. Using a rubber spatula, gently fold the egg whites into the batter until just combined.
- To make apple topping: Melt remaining 2 tablespoons butter in a small saucepan over medium heat. Add remaining apples, brown sugar, remaining 1/2 teaspoon cinnamon, and 2 ounces water. Cook, stirring occasionally, until apples are soft and mixture is jammy, 10 to 15 minutes.
- Melt 1 tablespoon butter in a large skillet over medium-high heat and pour in about 1/4 cup pancake batter. When small bubbles appear, after about 1 to 2 minutes, flip the pancake and continue cooking until both sides are lightly golden. Repeat with remaining batter, adding more butter to pan as needed. Serve pancakes with apple mixture.
Simple recipe for quark and apple pancakes

- 500 g low-fat quark
- 2 apples
- 150 g Flour
- 1/2 lemon, squeeze
- 3 eggs, size M
- 1 packet of vanilla sugar
- 1 tsp baking powder
- 30g sugar
- 1 pinch of salt
- 1 Prise Zimtpulver
- Oil for the pan
Preparation:
- Grate the apples with the peel and then stir in the lemon juice to prevent them from browning.
- Mix the low-fat quark with the eggs, sugar and vanilla sugar. So that the dry ingredients can be better distributed throughout the mixture, mix the flour with the cinnamon, salt and baking powder. Stir the flour mixture into the quark mixture and fold in the grated apples.
- Heat the oil in a non-stick pan over a medium temperature and fry the apple pancakes in batches. If you want, you can sprinkle powdered sugar over the pancakes before serving.
Fluffy vegan apple cinnamon pancakes

- 120 g spelled flour
- 1 THE Backpulver
- 1 1/2 tbsp sugar
- 1/3 tsp cinnamon
- 1/4 tsp salt
- 240 ml plant-based milk
- 1 tablespoon melted vegan butter spread, plus more for the pan
- 40 g unsweetened applesauce
- 1/2 TL Vanilleextrakt
Preparation:
- Place the dry ingredients in a bowl and whisk with a fork.
- Add the wet ingredients and stir to combine. Let the dough rest for a few minutes until it starts to rise.
- Meanwhile, heat your pan and spread a tablespoon of buttercream over medium heat. The secret to good pancakes (not just this one) is to get the pan nice and hot before spooning the batter into them. When the butter is melted and the pan is ready, spoon in your batter and turn the heat down a bit to medium. Once the edges of the pancake look done and a few small bubbles appear, flip the pancake over.
- When this is done, remove it from the pan and add more butter spread as needed for the next round.
Oven-baked apple pancakes for the whole family
What could be better than enjoying an oversized, puffy apple pancake made with fresh apples and topped with a generous dusting of powdered sugar and a drizzle of maple syrup?

- 65 g Allzweckmehl
- 1 tbsp sugar
- 1/2 tsp baking powder
- 1 pinch of salt
- 240 ml milk
- 1 TL Vanilleextrakt
- 2 tablespoons butter, melted
- 1 teaspoon ground nutmeg
- 55 g Butter
- 100g sugar
- 1/2 tsp cinnamon
- 1 apple, peeled, cored and sliced
Preparation:
- Mix the eggs, flour, 1 tablespoon sugar, baking powder and salt in a large bowl. Add milk little by little, stirring constantly. Add vanilla, melted butter and 1/2 teaspoon nutmeg. Let the dough stand for 30 minutes or overnight.
- Preheat the oven to 220°C.
- Melt the butter in an ovenproof skillet, brushing the sides of the pan. Mix 50g sugar, cinnamon and 1/2 teaspoon nutmeg in a small bowl.
- Sprinkle the sugar mixture over the butter. Line the pan with apple slices and sprinkle the remaining 50g sugar over the apples. Place the pan over medium heat until small bubbles appear in the mixture. Then carefully pour the batter mixture over the apples.
- Bake in the preheated oven for 15 minutes. Reduce the heat to 190°C and bake for another 10 minutes.
