Roast whole chicken in the oven until crispy

When you entertain guests, the whole chicken out of the oven looks much more appetizing. The only requirement is that the fried chicken is prepared correctly.

When you cook a whole chicken in the oven, the spices and of course the right fat play a crucial role. A little salt is not enough to season a chicken. For a delicious and crispy fried chicken recipe, garlic and fresh herbs such as rosemary and parsley are essential.

As far as fat goes, butter is the way to go. It can be mixed with minced garlic to make an aromatic garlic butter, which gives the fried chicken a special flavor. Below you will find the recipe for crispy, juicy chicken from the oven.

Ingredients for 4 servings:

1 whole chicken, about 2-3 kg, at room temperature, chicken giblets and neck removed
1/4 cup butter, melted
3 tbsp olive oil
1/4 cup white wine, dry e.g. B. Sauvignon Blanc or Chardonnay (optional)
1 lemon, halved
Salt and freshly ground pepper to taste
2 tbsp fresh parsley, chopped
4 garlic cloves, minced
1 whole garlic, roughly peeled and cut crosswise
3 fresh rosemary sprigs

Preparation:

1. Preheat the oven to 220 degrees (200 degrees fan). Line a baking sheet with aluminum foil.
2. Rinse chicken (including cavity) under cold running water and pat dry with paper towels.
3. Pour the olive oil, melted butter, wine (if using) and juice of half a lemon all over the chicken, under the skin and into the cavity. Season the chicken generously inside and out with salt and pepper and sprinkle the parsley over it.
4. Rub the minced garlic cloves all over the chicken, at the same time mixing all the ingredients and spreading them over or within the chicken.

5. Stuff the garlic into the cavity of the chicken with the rosemary sprigs and the squeezed lemon half. Then tie the legs together with kitchen twine.
6. Place the chicken, breast side up, on the baking sheet. Roast in the oven for about 1 hour and 15-20 minutes. When half of the baking time is up, baste the chicken with the fat from the baking tray.
7. After the cooking time, pierce the chicken leg with a wooden skewer and if the juice is clear, the chicken is cooked.
8. Then baste the roast chicken again and grill for another 2-3 minutes until it turns golden brown.
9. Remove from the oven, cover with aluminum foil and let rest for 10 minutes before serving. Drizzle with juices from the baking tray and the rest of the lemon, cut into slices and serve with a suitable side dish.
