Ingredients and preparation of the dough
Pumpkin-shaped rolls are usually classic rolls made from yeast dough. But in keeping with autumn, we will refine our recipe with some pumpkin puree. Which pumpkin you use is purely a matter of taste. To make the pumpkin rolls vegan, simply replace the butter with a plant-based alternative and spread the buns with a little soy cream before baking.
Ingredients:
- 450 grams of wheat flour
- 1 pack of dry yeast
- 200 grams of pumpkin puree
- 150 ml water, lukewarm
- 50 grams butter, at room temperature
- 30 grams of granulated sugar
- 1 egg, for brushing
- A pinch of salt
Preparation of the bun dough:
- Place flour in a large bowl and make a well in the center.
- Add dry yeast, sugar and water and mix well.
- Let the dough rest for 10 minutes and then add the pumpkin puree and butter.
- Knead everything into a smooth dough and let it rise, covered, in a warm place for about 90 minutes.
- Knead the dough well again with your hands and divide it into 8 pieces.
It's so easy to form pumpkin-shaped rolls
And now the fun begins! Forming the buns into pumpkin shapes is actually a lot easier than you think! It's that easy:
- Form the pieces of dough into small balls and place a piece of kitchen twine in the middle under the bun.
- Then cross the kitchen twine once on the top and bring it back under the bun at a right angle.
- Then cross the yarn over each other again and bring it back under the bun on the other side.
- Tie the yarn tightly and repeat the process with the remaining rolls.
- Sprinkle the rolls with a little flour and let them rise, covered, for 20 minutes.
- In the meantime, preheat the oven to 180 degrees and line a baking tray with baking paper.
- Brush the rolls with the egg and bake for 20 minutes.

Ingredients for pumpkin rolls:
- 500 grams of wheat flour
- 20 grams of fresh yeast
- 70 grams of sugar
- 100 grams butter, at room temperature
- 150 ml milk, lukewarm
- 1 NO
- 100 grams of pumpkin puree
- 1 tsp pumpkin spice spice or cinnamon
- A pinch of salt
Apple filling:
- 2 medium apples, cored and cut into small pieces
- 30 grams of brown sugar
- 1 tbsp Vanilla extract
- 1 tsp cinnamon
Preparation:
- To make the dough, whisk together the sugar and milk in a large bowl, crumble in the yeast and let stand for 10 minutes.
- Mix wheat flour and spices in a bowl.
- Add butter, pumpkin puree, egg and flour to the yeast mixture and knead everything into a smooth dough using the dough hook of the mixer - it takes about 6-8 minutes.
- Form the dough into a large ball and let it rise, covered, for 1 hour.
- Cook the filling ingredients in a small saucepan over medium heat until the apples are soft but not mushy.
- Preheat the oven to 180 degrees and line a baking tray with baking paper.
- Knead the dough again and divide it into 10 pieces.
- Roll out the balls and top each with 1-2 tablespoons of the apple filling.
- Squeeze again and form into a ball.
- Tie the dough pieces tightly with kitchen twine as described above.
- Brush pumpkin-shaped rolls with egg yolk and bake for 15-18 minutes until golden.
