Cauliflower and carrot salad
Who says cauliflower is boring? This salad is colorful, delicious and immune system-boosting! For this detox recipe you will need: 1 small head of cauliflower (stems removed), 2-3 medium carrots, 1 Granny Smith apple (cored and diced), 1/4 cup fresh cilantro, mint or parsley, chopped, 1/2 cup dried cherries (or cranberries), 1/2 cup raisins, 1/4 cup walnuts, coarsely chopped, 1/4 cup sunflower seeds, the juice of 1 lemon, 1 tablespoon apple cider vinegar, 2 teaspoons olive oil, 2 tablespoons maple syrup or honey, 3/4 teaspoon sea salt, 1/2 teaspoon freshly ground black pepper.
Preparation:
1. Place the cauliflower in a blender and chop finely. Transfer to a large bowl.
2. Chop the carrots and add them to the cauliflower.
3. Add the apple, coriander, cherries, raisins, walnuts and sunflower seeds.
4. In a small bowl, mix together the lemon juice, apple cider vinegar, oil, maple syrup, salt and pepper. Add the dressing to the salad and you're done!

Ingredients:
2 tablespoons butter
3 cloves of garlic, finely chopped
3 thyme sprigs, chopped
1 onion, diced
6 mushrooms
170 g tomato paste
800 g diced tomatoes
1 root Paprika
400 g beef broth
Salt and pepper to taste
For serving:
150 g of pepperoni
sliced black olives
fresh thyme leaves
In a large pot over medium heat, melt 1 tablespoon butter and add the garlic, thyme, and half the onion. Fry for 3-5 minutes or until the onion becomes translucent. Add the tomato paste, tomatoes, and water (or beef broth). Bring to a boil, then reduce heat and simmer for 20 minutes. Then puree the tomato mixture until completely smooth.
Meanwhile, melt the rest of the butter in a large skillet over medium heat. Fry the peppers, onions and mushrooms for 10-15 minutes. If you're not detoxing, you can now add Italian sausage.
Return the tomato mixture to the large pot, then add the peppers and beef broth. Simmer on low for another 10-15 minutes. Season to taste and decorate accordingly.
Cabbage and sweet potato soup
Ingredients:
2-3 medium sized sweet potatoes
4 cups coconut milk
1/4-1/2 cup nutritional yeast
1 tsp. Coconut oil
1/2 cup sweet onion, diced
2 1/2 cups kale, chopped
1/2 tsp. Cayenne pepper to taste
1 tsp. Sea salt to taste
Diesweet potatoesCut in half and bake at 180 to 200 degrees for 45 minutes (or until soft). Then remove the meat from the skin. Wash and roughly chop the cabbage and onions. Place the sweet potato flesh, coconut milk, and nutritional yeast in a food processor and pulse on medium or high speed until smooth. In a soup pot, heat the coconut oil over medium heat and sauté onions for a few minutes. Add the pureed mixture and bring everything to a boil. Reduce the heat and add the kale. Simmer over low heat for a few minutes, then season with cayenne pepper and salt.

Ginger carrot soup
Ingredients for 6 servings
1 tbsp olive oil
1 large onion, chopped
5 garlic cloves, minced
1 piece of ginger, grated
1 tbsp ground cumin
1 tsp ground cinnamon
2 carrots, peeled and chopped
4 cups vegetable or chicken broth
2 tablespoons lemon juice
Salt and pepper
1 cup coconut milk (optional)
Coriander for garnish
Preparation:
Heat the oil in a large pot over medium heat. Add the onions, cook and stir until they become soft. Add the garlic, ginger, cumin and cinnamon and cook for another 2-3 minutes. Add the carrots and stir. Cook for another 4-5 minutes.
Add the broth, cover the pot, and cook until reduced or until the carrots begin to soften, about 30 minutes. Use a hand blender to puree the mixture until smooth. Add the lemon juice and coconut milk and season with salt and pepper.
