Strawberry Rhubarb Tiramisu: The Italian party dessert with a difference

Ingredients
For 12 to 16 servings
- 6 sticks of rhubarb
- 1 cup sugar and 1 packet vanilla sugar
- 8 cups strawberries (about 2 kg)
- 475 g Mascarpone
- 250 g Quark
- 600 g Amarettini
to vary and refine (if desired)
- 180 ml orange juice
- 60 ml orange liqueur /for example Grand Marnier/
- for sprinkling: cocoa powder

This is how you prepare the fruity summer dessert without eggs
Preparation time: 30 minutes

1. Wash and clean the strawberries, cut them in half and put them in a large pot. Set aside about a handful for garnish. Add sugar to the rest, stir and warm over low heat. Mash coarsely with a fork and allow to cool.
2. Wash, clean, peel and chop the rhubarb. Place in a saucepan, sprinkle with 3 tablespoons sugar and bring to a boil over medium heat. Then remove from heat and let cool.
3. Mix the ingredients for the filling such as mascarpone and quark. Add the vanilla sugar and mix the whole thing well.
4. Optional: Pour the orange juice and orange liqueur into a bowl and dip the amarettini in it one by one and line a baking dish with half of the ladyfingers. Make sure that they completely cover the floor.
5. Layer the tiramisu as follows: First cover the amarettini with half of the strawberries. Then spread with the mascarpone cream and spread the rhubarb pieces over it. Repeat this sequence again. Then garnish with the raw berries. Let cool in the refrigerator for 3 hours.
Vary strawberry rhubarb tiramisu and prepare it in a glass
You can also vary the strawberry tiramisu as you like by garnishing it with other fruits of your choice. You can also dip the Amarettinis in coffee and liqueur in the classic way. Or you can skip the alcohol completely. In this case, you can add 100 ml of water to the strawberry puree while cooking and then simmer until the puree thickens.
Another alternative to the classic dessert would be to prepare it in a glass. In this case, however, you will have to expect more effort and the preparation time will be extended. But they portioned the dessert nicely, which is particularly important at parties. This also saves you time to later distribute the dessert on plates and serve it and you can see straight away how many portions you actually have.
