Lamb's lettuce recipe with cranberries, bacon, apples and honey mustard dressing

A delicious lamb's lettuce recipe for gourmets

Ingredients for four servings:

  • 4 – 6 cups lamb’s lettuce ormixed leaf salads, preferably baby spinach
  • 1/2 cup dried cranberries
  • 1/2 cup chopped walnuts
  • 100 g feta cheese (Danish)
  • 1/2 sweet red apple
  • 1/2 tart green apple (“Granny Smith” variety)
  • 50 g smoked bacon, sliced ​​very thinly
  • 1 1/2 tsp sugar

For the dressing:

  • 4 tbsp olive oil
  • 3 EL Honig
  • 1 tbsp apple cider vinegar
  • 1 – 4 TL Dijon-Mustard
  • Sea salt from the mill
  • black pepper from the mill

Preparation: First clean, wash and drain the lamb's lettuce or, if possible, spin dry. Chop the nuts and briefly toast them in a dry pan. Then sprinkle sugar over it and caramelize, stirring constantly. In the same pan, fry the thin bacon with a few drops of oil until it is crispy. Then let it cool down.

Halve the apples, core them and only use half of each variety for the salad. They do not need to be peeled, but if you prefer, remove the peel. Then cut into thin slices with a sharp knife. Peel the onion, halve it and cut it just as thinly. Shred or crumble the feta cheese.

Prepare the dressing: Put all the ingredients for the dressing in a small bowl and beat with a whisk. Another technique you can try is to put the ingredients in a small screw-top jar, close it, and then shake vigorously. The result is a dressing with an even, smooth structure.

Place the lamb's lettuce in a large bowl and top with all the other ingredients such as the cooled bacon, crumbled cheese, apple pieces, onion and sprinkle with dried cranberries and caramelized walnuts.
