Preparation:

  • Mix flour, granulated sugar, baking powder and salt in a large bowl.
  • Cut the butter into small cubes and add to the flour mixture. Work into the flour with your hands and add egg.
  • Knead the mixture with the dough hook of the hand mixer and then with your hands to form a smooth dough.
  • Wrap the shortcrust pastry in cling film and put it in the fridge for about 30-40 minutes.
  • In the meantime, soak the raisins in the apple juice for the filling.
  • Peel the apples, core them and cut them into thin wedges or small pieces and mix with the lemon juice.
  • Place the apples in a small saucepan with the sugar, cinnamon and raisins. Simmer over low heat, stirring occasionally, for 15-20 minutes.
  • Preheat the oven to 200 degrees. Grease a 26 centimeter diameter springform pan with butter and dust with a little flour.
  • Roll out 2/3 of the dough on a floured work surface and line the mold with it and form an edge about 3-4 centimeters high.
  • Prick the base evenly several times with a fork and, if desired, sprinkle some almond sticks on top.
  • Spread the apple filling on the base and press it evenly.
  • Roll out the remaining dough and cut out a 26 centimeter circle. Carefully place the dough on the cake and press the edges together, pricking them several times with a fork.
  • Bake the covered apple pie for about 45-50 minutes and let it cool completely in the pan.
