- 100g sugar
- 50 g Flour
- 1/2 tsp baking powder
For the cream:
- 5 tbsp sugar
- 2 egg yolks
- 33 g Flour
- 1/4 tsp salt
- 230 ml milk
- 1/2 TL Vanilleextrakt
- 230 g Crème fraîche
Other ingredients:
- 70 g jam (raspberries or any other fruit)
- 300 g beliebiges Syrup
- 1 tbsp lemon juice
Bake the base
This recipe is intended for 6 servings, i.e. 6 small glasses (the size of jam jars). Preheat the oven to 175 degrees and line a springform pan (22 cm diameter) with baking paper. In a bowl, beat the eggs with a mixer and gradually add the sugar. Stir on high for about 8 minutes until fluffy.
In a separate bowl, mix the flour with the baking powder, which you then gradually stir into the egg mixture. Stir just until there are no lumps, pour the batter into the pan and bake for 25 to 30 minutes. Allow the soil to cool.
Prepare the cream for the cakes
In the meantime, prepare the cream. To do this, first mix 4 tablespoons of sugar with the egg yolk, flour and salt. Set the mixture aside for now. Heat the milk and remaining sugar in a saucepan on the stove. As soon as the milk starts to boil, remove the pan from the heat, add the vanilla and let the milk cool for 2 minutes. Then slowly add them to the egg mixture, stirring constantly.
Then put the mixture back on the stove and bring it to the boil, stirring constantly. Continue cooking until a thick cream forms. This can take up to 6 minutes. Then let the mixture cool at room temperature. Beat the crème fraîche with a tablespoon of sugar until it becomes stiff and fold it into the cream. Cover the bowl with foil and store it temporarily in the refrigerator.
Arrange the cake in the glass
Mix the syrup with the lemon juice. Using a glass or cookie cutter, cut circles out of the bottom. You need three circles per glass. First place a circle on the bottom of each glass. Add a little of the syrup, spread the jam over it and then spread 3 tablespoons of the cream over each. Repeat the whole thing two more times and finish with cream. The cakes should then rest in the refrigerator for another 30 minutes.
