Which spices are suitable for a spice cake from a tray?
The perfect spice mix for a sheet spice cake is a mixture of cinnamon, ginger, nutmeg, allspice and cloves. You can use lots of cinnamon, a little ginger, nutmeg and allspice and just a pinch of cloves.
Prepare delicious cake with icing
Ingredients for 10 servings:
220 g Allzweckmehl
1/2 teaspoon kosher salt
1 teaspoon baking powder
2 teaspoons cinnamon
1/2 teaspoon ginger powder
1/2 teaspoon nutmeg
1/2 teaspoon allspice
1/8 teaspoon cloves
300 g granulated sugar
100g brown sugar
220 g neutral tasting oil

2 teaspoons vanilla extract
60g orange juice
for the icing:
130g powdered sugar
2 tablespoons milk
1/2 teaspoon vanilla extract
Preparation instructions:
- Preheat the oven to 180 degrees C and grease a baking tray or line it with parchment paper.
- In a medium mixing bowl, whisk together the flour, salt, baking powder, baking soda, cinnamon, ginger, nutmeg, allspice and cloves.
- In a large mixing bowl, whisk eggs and sugar together. Stir until the sugar has dissolved andthe ingredientsare evenly connected to each other. Stir in vanilla extract with a whisk.
- Fold half of the dry ingredients into the wet mixture and then stir in the oil. Fold in the other half of the dry ingredients and then stir in the orange juice.
- Pour the dough into the baking pan and bake in the oven at 180 degrees C for 80-85 minutes. Check whether the loaf is finished baking by piercing the center with a toothpick. If the toothpick comes out clean, it is fully baked.
- Remove the spice cake from the oven and allow it to cool completely.
- While the cake is cooling, prepare the icing by mixing the powdered sugar, milk and vanilla extract until smooth and pouring over the top only when you are sure the cake has cooled completely. Slice and serve.
Make your own vegan cinnamon sheet cake at home
Ingredients for 15 servings:
480 g all-purpose flour, white wholemeal flour, wholemeal pastry or light spelled flour
1 1/2 teaspoons baking powder
1/2 teaspoon baking powder
1 tablespoon ground cinnamon
1 1/2 teaspoons ground ginger
1/2 teaspoon ground nutmeg
1/4 teaspoon ground cloves
1/2 teaspoon fine salt
180g brown sugar or coconut sugar
60 g tasteless vegetable oil (e.g. safflower, refined avocado or grape seed oil)
2 teaspoons vanilla extract
320 g vegan buttermilk (mix with 2 teaspoons of apple cider vinegar or lemon juice and let steep for a few minutes)
250 g pure applesauce
Vegan cream cheese glaze:
8 tablespoons vegan butter of your choice, let soften at room temperature for 15 minutes
120 g vegan cream cheese of your choice, let it soften at room temperature for 15 minutes
1 teaspoon vanilla extract
350g powdered sugar
Sprinkles or powdered sugar to decorate (optional)
Instructions for preparation:
- Preheat your oven to 180 degrees C. Lightly grease a baking sheet and line the bottom with a piece of parchment paper.
- Sift flour, baking powder, baking soda and spices into a large mixing bowl. Add the salt.
- In another large bowl, combine sugar, oil, vanilla, buttermilk and applesauce. Add these wet ingredients to the dry ingredients. Mix the dough well with a hand mixer or a whisk until there are no longer any lumps visible.
- Pour the batter into the cake pan and bake for 35 minutes, until the top is set or a toothpick inserted in the center comes out clean. When the cake is ready, let it cool completely (1-2 hours).
- When the cake is ready, or in advance, prepare the icing. Place the butter and cream cheese in the bowl of a stand mixer fitted with the beater attachment (alternatively, you can use a hand mixer on medium speed). Beat on medium speed for a few minutes, then add the vanilla and incorporate completely. Addthe sugarAdd and beat on low speed. If using a stand mixer, switch to the whisk and continue beating on medium speed until the frosting is fluffy and smooth.
- Use an upside-down spatula to coat the cake with the frosting. Garnish with sprinkles if you like. Cut into 12-15 slices and serve!
Baked apple spice cake with cream cheese icing
Ingredients for 15 servings:
240 g Allzweckmehl
1 1/2 teaspoons baking powder
1 1/2 teaspoons ground cinnamon
1 teaspoon ground nutmeg
1 teaspoon salt
230 g unsalted butter, softened
200g sugar
60g brown sugar
2 Owner
1 teaspoon vanilla
2 apples diced
Cream cheese icing:
240 g cream cheese, softened
130g powdered sugar
1 teaspoon vanilla
1/4 teaspoon cinnamon
1 tablespoon milk or more if necessary
Preparation instructions:
- Preheat the oven to 180 degrees C. Coat a baking sheet with nonstick cooking spray.
- In a medium mixing bowl, combine flour, baking powder, cinnamon, nutmeg and salt and set aside.
- In a large mixing bowl, beat butter, sugar, and brown sugar until smooth, 1 to 2 minutes. Add eggs and vanilla and stir.
- Add the dry ingredients to the wet ingredients in 2 steps and mix until just combined. The dough will be thick.
- Stir in the apples with a wooden spoon or spatula. Pour the cake batter into the prepared pan and spread it evenly.
- Bake for 40 to 45 minutes, or until a toothpick inserted in the center comes out clean. Carefully remove from the oven and let cool on a wire rack for about an hour, or until about room temperature.
Cream cheese icing:
In a large mixing bowl, beat cream cheese, powdered sugar, vanilla and cinnamon until smooth. Add milk as needed until desired consistency is reached. Spread the icing in an even layer over the cake. Sprinkle with more ground cinnamon if desired.
