Gluten-free buckwheat salad with mozzarella – A healthy Mediterranean-style recipe

Ingredients:

100 g buckwheat
1 liter of water
1 red onion
2 tomatoes
1 cucumber
100g black olives
1 green pepper
60 ml olive oil
The juice of a lemon
1/2 tsp salt
1 teaspoon dried oregano
1 ball of mozzarella
chopped fresh parsley
black pepper to taste

Preparation:

In a potbuckwheat and waterbring to a boil. When the water boils, reduce the heat to the lowest setting and let the buckwheat cook, covered, for about 20 minutes. Remove from the heat and let stand, covered, for about 5 minutes. Stir and let cool.

In the meantime, cut the tomatoes and cucumbers into bite-sized pieces andput in a bowl. Halve the olives, stone them and add them to the salad. Chop the green pepper and red onion and sprinkle over the other ingredients in the bowl.

To make the dressing, mix olive oil, lemon juice, salt and oregano in a small bowl.

Drain the cooled buckwheat, add it to the salad and season with the dressing. Mix everything well.

Then arrange the prepared salad on a plate, cut the mozzarella into slices and distribute it on top. Finely chop the parsley and sprinkle over the salad. Finally, season with black pepper and serve.
