Make your own grill marinade – 18 simple recipes

When the sun shines, it's time to grill! Grill lovers are divided into two groups: those who buy ready-marinated meat and some who make the grill marinade themselves or, otherwise, simply season the grilled food with pepper and salt before frying. It is important to note that the meat of your choice is marinated for around 10 hours or, ideally, overnight. Which is relatively time consuming. However, a marinade takes about 15 minutes if all the ingredients are present.

Make your own grill marinade – the basic recipe

  • 40 ml vegetable oil
  • 20 ml dry, redWein
  • 1 tbsp tomato paste or ketchup
  • 1 shallot
  • 1 Prise Oregano
  • 1 Rosmarin plug

with oranges and rosemary

  • 500 g of oranges
  • 500 ml honey
  • 1/2 cup cognac or rum
  • 3 cloves garlic
  • 2 chili peppers
  • 1/2 tbsp sugar
  • 1 bunch of fresh rosemary
  • Salt and pepper

Lemon marinade

  • 250 ml olive oil
  • 30-40 ml fresh lemon juice
  • 1 Orange
  • 1 THE Rosmarin
  • 1 TL Lavender
  • 2 bay leaves
  • Salt and pepper

Chicken meat marinade

  • 225 yogurt without sugar
  • 1 tbsp lemon juice
  • 1 tbsp freshly grated ginger
  • 1 tsp cinnamon
  • 2 tsp caraway seeds
  • 2 teaspoons cayenne pepper
  • 2 tsp black pepper
  • 2 tsp salt

with beer

  • Bottle of dark beer
  • 120 ml olive oil
  • 2 EL Dijonsenf
  • 1 onion, finely chopped
  • 4-5 cloves of garlic
  • Bay leaves
  • Juniper berries
  • Salt, pepper and basil

The meat from game has a very typical taste and is only used as grilled meat because it quickly becomes tough. Chefs recommend vacuum sealing the meat with the marinade and freezing it.

Marinade for pork

  • 80 ml vegetable broth
  • 100 ml Tomato juice
  • 1 EL Honig
  • 1 shallot
  • 1/2 TL Curry
  • 1 TL Chiliflocken
  • 1 Ingwer socket
  • Salt and pepper

Brazilian recipe with juniper berries for skewers

  • the juice from three medium-sized lemons
  • 80 ml olive oil
  • 20g coffee beans
  • 6 juniper berries
  • 1 tbsp Chilli flakes
  • 2 tbsp paprika powder
  • 3 tbsp brown sugar

with Tabasco sauce

  • 125 ml olive oil
  • 6 drops of Tabasco sauce
  • 80 ml vinegar
  • 8 tbsp acacia honey
  • 2 onions, finely chopped
  • 2 cloves garlic
  • 2 tbsp paprika powder
  • 2 THE Oregano

with ginger and lemon juice

  • 80 ml freshly squeezed lemon or orange juice
  • 80 ml soy sauce
  • 60 ml honey
  • 1 tsp ginger powder
  • 1 tsp garlic powder
  • Spring onion

*If desired, use fresh garlic and ginger

Herb marinade

  • 250-300 olive oil
  • 1 tbsp lemon juice
  • 4 cloves of garlic
  • 1 tsp sugar
  • 1 tsp salt
  • 1 Prise Pfeffer
  • 1 Rosmarin plug
  • 1 Prise Thymian
  • 1 Prise Oregano
  • 1 pinch of parsley
  • 1 Majoran socket

Gluten free marinade

  • 100 ml vegetable oil
  • half a grated lemon or orange peel
  • 1 shallot
  • 1 TL Turmeric
  • 2 TL Curry
  • 1/2 TL Chili pepper
  • 1/2 tsp coriander seeds
  • 1 Chile Plug
  • Salt

*If you prefer the marinade to be thinner, add lemon or orange juice.

Honey-ginger marinade for fish and tofu

  • 100 ml sesame oil
  • 3 tbsp lemon juice
  • 30 g acacia honey
  • 40 g ginger root
  • Salt and pepper

Jack Daniels Marinade

  • 250 ml Jack Daniel or other whiskey
  • 175 orange juice (freshly squeezed)
  • 250 ml molasses (can also be replaced with maple syrup or use brown sugar and boil it with water to form a syrup)
  • 2-3 tablespoons of ready-made steak sauce or make your own with ketchup and spices
  • If you want spicy, chilli

The rest can also simply be served on the table as a sauce.

Spicy yogurt-garlic marinade

  • 2 tbsp yogurt without sugar
  • 2-3 finely chopped cloves of garlic
  • half shallot
  • olive oil
  • 2 tbsp herbs of your preference

Prepare the meat with pepper and salt. Stir, mix and puree all the ingredients and pour over the meat. It should be marinated in the refrigerator under foil for at least 2 hours.

Curry

  • 2 tbsp vegetable oil
  • 2 tbsp acacia honey
  • 1 tbsp lemon juice
  • 2 tbsp grated lemon peel
  • 1 clove garlic
  • 2 tbsp Curry powder
  • 1/2 TL Chiliflocken
  • 1/2 bunch of fresh coriander

Mango yogurt

  • 1 mango diced
  • 250 g yogurt without sugar
  • 1 bunch of mint
  • 2 cloves garlic
  • Spring onion
  • 1 small chopped chili pepper
  • Salt and pepper

First put the yogurt and the fresh mango and mint in a blender and mix until you get a homogeneous puree. Then let the meat rest in the marinade for at least an hour and then fry it with the finely chopped chili pepper and spring onion.

Vegetarian Tofu Marinade

  • approx. 200g tofu cut into equal pieces
  • oil
  • Spring onion
  • 2 tbsp soy sauce
  • 1 EL Senf
  • 1 TL Chiliflocken
  • 1 clove of garlic
  • 2 tbsp Kuromitsu (Japanese sugar syrup)

First remove the excess water from the tofu using kitchen paper. Then heat oil in the pan, then sauté the chili flakes, spring onion and tofu for about 2 minutes and then add the garlic. When the tofu starts to brown, pour over the soy sauce and kuromitsu. When the tofu turns golden brown, remove it from the pan. Garnish with crispy onion if desired.
