Goulash is a soup or stew made from meat and vegetables flavored with seasonal spices. It can also be prepared as a warm vegetarian vegetable soup with potatoes, which in Austria is traditionally eaten with dark sourdough bread. This recipe is both very filling and very easy to make!

Goulash soup with potatoes according to an authentic Austrian recipe

This vegetarian goulash recipe consists of a few simple ingredients such as onions, garlic and potatoes in a thick vegetable broth. You can spice it up with additional ingredients such as caraway (found in traditional Hungarian goulash soup), parsley or (vegan) yogurt.

Ingredients for 4 servings:

  • 2 tablespoons olive oil
  • 2 onions, peeled and finely diced
  • 8 garlic cloves, peeled and finely diced
  • 8-10 potatoes (depending on the size of the potatoes), peeled and cut into small pieces
  • 6 teaspoons sweet paprika powder
  • 2 teaspoons smoked paprika (optional)
  • 1600 ml vegetable broth
  • 6 tablespoons of tomato puree
  • 230ml water
  • Salt and pepper to taste

How to prepare the vegetarian oneGoulash soup recipewith potatoes:

  1. Heat the oil in a large pot over medium-high heat. Add the garlic and onion and cook, stirring constantly, until soft and golden brown.
  2. Add diced potatoes, paprika, tomato puree and vegetable broth.
  3. Season with salt and pepper. The amount needed depends on how salty your vegetable broth already is.
  4. Bring the whole thing to a boil. Then reduce the temperature and let the mixture simmer with the lid closed for about 20 - 25 minutes until the potatoes are soft. Taste and adjust salt.
  5. Add desired addition such as fresh parsley or yogurt (if you want a vegan goulash soup, omit the yogurt or choose a vegan option).
  6. Serve with bread.
