However, the simple oatmeal banana cake can be made even better by adding a few simple ingredients. Here is the simplest cake recipe, as well as ideas for improving it.

For the 2-ingredient cake:

  • 350 g pureed bananas
  • 135 g wholesome oat flakes

Preparation:

  1. Preheat the oven to 180°C. Line the bottom and sides of a 15cm springform pan or round baking pan with baking paper.
  2. Place the pureed bananas in a large mixing bowl. Please note: The bananas must be pureed until they have the consistency of a smoothie. Simply crushing it is not enough. This recipe also works best with just-ripened bananas rather thanoverripe bananas.
  3. Add the oats to the banana puree. Stir well until the oats are evenly mixed in.
  4. Pour the batter into the baking pan. Bake for about 30 minutes. When finished, the surface of the cake should look dry. The top of the cake should feel firm.
  5. Allow the cake to cool before cutting. The uncut cake can be stored at room temperature for 1-2 days, or longer in the refrigerator.

Refine the simple oatmeal cake

  • Baking powder:Mix a tablespoon of baking powder into the batter to make the banana oatmeal cake light and airy and more like a cake.

  • Chocolate drops:Add 50 grams of chocolate chips to sweeten and add chocolate flavor to the cake.

Oatmeal banana cake from the tray with glaze

A sheet cake is perfect for a celebration as well as for a snack in between. This sheet pan banana oatmeal cake recipe is light, tender and tastes like fresh bananas! The oat flakes give the cake a very special taste and with warming spices and a little vanilla the cake is a real hit. Covered with a delicious maple syrup buttercream, this cake is everything you need for the weekend. Plus, you can easily make it vegan!

Ingredients:

For the sheet cake:

  • 120g cake flour (or regular flour)
  • 80g oat flakes
  • 3 ripe bananas, mashed
  • 200 g cane sugar
  • 1 tablespoon baking powder
  • 1 tablespoon ground cinnamon
  • 1 teaspoon ground nutmeg
  • 1/2 teaspoon ground allspice
  • 1/4 teaspoon ground ginger
  • 1/2 teaspoon sea salt
  • 1 teaspoon vanilla extract
  • 250 ml almond milk + 2 tablespoons
  • 1 teaspoon apple cider vinegar
  • 4 tablespoons butter, melted

For the buttercream:

  • 60 g maple syrup
  • 220 g soft butter
  • 1 teaspoon vanilla extract
  • 1 teaspoon cinnamon
  • 1 tablespoon almond milk

Topping:

  • 200 g pecans, chopped (optional)

preparation

Prepare the cake:

  1. Preheat the oven to 180°C. Lightly grease a baking pan and line it with baking paper so that two layers protrude.
  2. In a bowl, whisk together the milk and apple cider vinegar and set aside for 5-10 minutes.
  3. In another bowl, mix flour, oats, sugar, baking powder, cinnamon, nutmeg, allspice and ginger. Add the bananas, the milk-apple cider vinegar mixture, the melted butter and the vanilla and mix everything well with the hand mixer. Note: If the batter looks too thick, add milk 1 tablespoon at a time until it is pourable but not runny.
  4. Pour the batter into the prepared pan and smooth it out.
  5. Bake 20-25 minutes, or until a toothpick inserted into the center of the cake comes out clean.
  6. Allow the oatmeal cake to cool in the tin for about 30 minutes before removing it from the tin and placing it on a wire rack to cool completely.

Prepare the buttercream:

  1. Beat the softened butter with a hand mixer until smooth and light. Add powdered sugar, cinnamon, maple syrup, vanilla and milk and beat on medium speed until smooth and fluffy. Note: If the mixture is too thick, add another tablespoon of milk. If it is too runny, add more powdered sugar.
  2. Spread the maple syrup buttercream onto the cooled cake and smooth it with a metal or rubber spatula. You can garnish the cake with toasted, chopped pecans if desired.
  3. Cut the coated sheet cake into medium-sized pieces and enjoy!
