  • 2 medium, overripe bananas
  • 140 grams of almond flour
  • 70 grams of fine oat flakes
  • 50 grams of cocoa powder
  • 100 grams of coconut blossom sugar
  • 45 grams of maple syrup
  • 30 grams melted coconut oil
  • 60 grams of tahini or peanut butter
  • 40ml water
  • 1 tsp flaxseed
  • 1 TL Vanilleextrakt
  • 50 grams of dark chocolate, chopped finely
  • 1 tsp baking powder
  • A pinch of salt

Preparation:

  • Preheat the oven to 180 degrees.
  • Mix flax seeds and water in a bowl and let stand for 5 minutes.
  • Mash the bananas with a fork and whisk them with the flaxseed mixture in a large bowl.
  • Add coconut blossom sugar, tahini, maple syrup, coconut oil, baking powder and vanilla extract and mix well.
  • Add cocoa powder and mix again.
  • Add the oat flakes and almond flour to the bowl and mix everything into a smooth dough.
  • Finally, fold in the chopped chocolate and stir.
  • Fill 11 muffin tins with the batter and bake for 25-30 minutes.
