Who doesn't love the yeast plait? Especially at Easter it should not be missing from the table and the Easter menu. And how about surprising and treating your loved ones this year with a homemade Easter braid? Simply choose any recipe from the list below and decide for yourself how you braid your yeast braid. We have put together some instructions for this too.
Braid yeast plaits and bake with berries
For the dough:
– 250 ml warm whole milk
– 2 1/4 tsp dry yeast
– 360 g Flour
– 3 tbsp sugar
– 1 tsp salt
– 115 g Butter
– 3 egg yolks
– 1 large egg
For the filling:
– 225 g cream cheese
– 150g sugar
– 1 large egg
– 2 cups of berries (blueberries, raspberries, blackberries)
Mix the warm milk with the yeast until the yeast has dissolved. To do this, let them rest for 10 to 15 minutes. Meanwhile, combine flour, sugar and salt in a large bowl. Add the softened butter and mix. Then process the mixture of milk and yeast with the egg yolk and then add it to the flour mixture. Mix with a wooden spoon, but do not knead. Let the dough rest covered in a warm place for at least two hours. Then roll the dough out into a square on a floured surface and fold it in thirds (like an official letter). Repeat the whole thing two more times and then let it rest for another 30 minutes before youadd the fillingand braid the yeast plait.
Prepare filling
Divide the dough and roll out both halves into rectangles (approx. 30 x 15 cm). Place them on two baking sheets lined with parchment paper. Cut both rectangles into thirds lengthwise with a knife, not cutting all the way through but just scoring the dough. Cut the outer thirds diagonally into 2.5 cm wide strips. Mix sugar, cream cheese and egg. Use this to coat the middle thirds of the former rectangles and sprinkle with your chosen berries. Now you can braid the yeast braid.
InstructionsBraid into a yeast plait with filling
Now braid the yeast plait as shown in the instructions above. For example, start with the top right strip, place the left one over it and switch back to the right. Continue this way until you reach the bottom. Cover the braid with plastic wrap and let it rest for 30 minutes. Preheat the oven to 200 degrees. In the meantime, brush the braid with a beaten egg. Now you can bake the plait for about 30 minutes until it is golden brown. Serve the plait decorated with icing made from powdered sugar and milk or cream.

– 4 tsp dry yeast
– 1 2/3 cups warm water
– 5 cups flour
– 3/4 cup sugar
– 1 1/2 tsp salt
– 4 tsp milk
– 2 Owner
– 5 EL Butter
Dissolve the yeast in the warm water for 5 to 10 minutes and add two cups of flour. Then mix sugar and salt into the mixture. Add two more cups of flour, followed by the eggs and milk. Using the last cup of flour and the butter, begin kneading the dough. If the dough is too sticky, add more flour. It should only stick slightly. Divide the dough into three parts, mixing one with grated lemon peel, the second with pureed raspberries and the third with pureed blueberries, and place them in separate, oiled bowls. Cover the bowls with plastic wrap and let the dough rest for two hours or until it is one and a half times its original size. Now you can almost start braiding the yeast braid.
So that you can braid the yeast plait, you now have to roll out the three pieces of dough into strands. You decide how many strands you use for this. But as a beginner, don't make it too difficult for yourself. At the end of the article we have a video tutorial with braids with up to five strands. Once the braid is finished, leave it for another 45 minutes, then brush it with a beaten egg. Bake in the preheated oven for 20 minutes at 200 degrees and then another 30 minutes at 175 degrees.
WithLemon, raspberry and blueberry
Pre-dough:
– 3/4 cup warm water
– 2 tsp sugar
– 1 tbsp dry yeast
– 1/4 cup flour
Dough:
– 3/4 cup natural or vanilla yogurt
– 1/2 Tasse Butter
– 2 large, smashed eggs
– 1/2 cup sugar
– 2 tsp salt
– 2 TL Vanilleextrakt
– 5 cups flour
Recipe
To make the pre-dough, mix the ingredients listed in a small bowl, then cover the bowl with foil and set the mixture aside to ferment for 10 to 15 minutes. Prepare the dough by mixing the starter dough, eggs, yogurt, butter, sugar, salt and vanilla extract. Then add the flour and stir with the dough hook until a smooth dough forms. If necessary, add more flour. You can also knead with your hands.
Then oil a bowl, form the dough into a ball and place it in the bowl, then cover with foil and let the dough rest for 60 to 90 minutes. During this time it will almost double in size. Then roll it out into a rectangle and divide it into three smaller rectangles of equal size. Spread this with blueberry or raspberry jam and lemon curd with additional grated lemon peel before you start braiding the yeast plaits.
You then roll these coated rectangles lengthways so that you get three strands. Now you can braid the yeast braid. The braid then needs to rest for another hour. Then brush the braid with a beaten egg. Bake the fruity plait in a preheated oven at 175 degrees for about 35 minutes. The surface should be nice and golden brown.
2 strandsbraid
The easiest way to braid a braid is from two strands. You can see a variant in the example above. The two strands are simply twisted in like a spiral. In order to secure the strands together well, you can briefly roll the finished spiral back and forth after you braid the yeast braid. This way you can make sure that the braid doesn't fall apart. There is also a variant of how you can braid a yeast braid using just a single strand. You can also find out how easy it works in the video instructions below.
Other ideas

Threestrandsbraid
A three-strand braid is also very easy to braid. This is the well-known technique that is also used to braid hair. Place the three strands next to each other and start braiding in the middle. Once you have reached the top, press the ends of the strands together well. Then turn the braid over and you can braid the remaining yeast braid. Close the other end too.

Things get more complicated with six strands. With a little practice, you'll quickly get the hang of it and easily braid a beautiful braid that everyone will be amazed at. A yeast braid made from eight strands is no less impressive. You can certainly take on this challenge, it's actually not that difficult as long as you have the right instructions. But you shouldn't rush into it at the beginning. When making a braid, start with the simplest version and try something new next time.
