You can get a head start on making this spectacular elderflower cake by preparing each component at least a day in advance. This makes assembling and decorating the cake much easier and quicker.

Ingredients

For the cake bases:

  • 180 g Flour
  • 1/2 teaspoon baking powder
  • 180 g Butter
  • 180g sugar
  • 3 medium eggs
  • 1 tablespoon elderflower syrup
  • Zest of 1 lemon

For the syrup:

  • Juice of 1 lemon
  • 1 tablespoon elderflower syrup
  • 60g sugar

For the filling:

  • 120g powdered sugar
  • 45 g Butter
  • 1 – 2 teaspoons elderflower syrup
  • 3 – 4 tablespoons of quark
  • 60 g powdered sugar for the glaze
  • 2 teaspoons lemon juice

For decoration:

  • Edible flowers, optional

Try the elderflower cake recipe

  1. Preheat the oven to 180 degrees.
  2. After adding the other tart ingredients to a large bowl, sift in the flour and baking powder and beat the mixture with a wooden spoon until smooth. Pour the dough into two buttered 20cm cake tins lined with baking paper.
  3. Bake the dough for 30-40 minutes, then remove it from the oven and let it cool on a wire rack.
  4. In the meantime, add the sugar and lemon juiceand the elderflower syrupPlace in a saucepan and simmer over low heat until the sugar has dissolved.
  5. While the cake layers are still warm, use a chopstick to poke a few holes about a centimeter deep and then drizzle the syrup over both cake layers to soak them up.
  6. Place the powdered sugar, butter and elderflower syrup in a bowl and mix the ingredients thoroughly until smooth. After you have put the mixture and then the curd between the two cake layers, you can put them together. Frost the top of the cake with a little powdered sugar and a few drops of lemon juice to create a thin layer of frosting for decorating. You can also decorate the dessert with edible flowers.
