Ingredients for 4 servings
- 800 grams of salmon fillet
- 2 cloves of garlic, finely chopped
- 1 medium onion, chopped finely
- 80 grams of breadcrumbs
- 230 grams of cream cheese
- 280 grams of fresh spinach
- 60 grams of Parmesan, grated
- 1 No
- 1 roll of puff pastry
- 2 tbsp fresh dill, finely chopped
- 20 Gramm Butter
- Salt and pepper for the spinach and salmon
preparation
- Preheat the oven to 220 degrees and line a large baking tray with baking paper.
- Heat butter in a large skillet over medium heat and sauté garlic and onion for 2-3 minutes until translucent.
- Add spinach and season with salt and pepper.
- Cook for 3-4 minutes, stirring occasionally.
- Add the breadcrumbs, parmesan, cream cheese and dill to the pan and mix everything well until you get a homogeneous mixture.
- Roll out the puff pastry and place the salmon fillet in the middle. Season with salt and pepper on both sides.
- Cover the salmon evenly with the spinach mixture.
- Fold the sides of the puff pastry toward the center, starting with the two short sides and then the longer sides.
- To keep the package tightly sealed, lightly press the puff pastry together with your fingers.
- Next, prop the puff pastry roll on the baking sheet so that the folded side is down.
- Cut the roll crosswise with a sharp knife.
- Beat the egg lightly and brush it over the puff pastry.
- Bake for about 25-30 minutes until golden brown and remove from the oven.

- 70 grams of sour cream
- 60 grams of mayonnaise or Greek yogurt for a lighter version

- Salt
Lemon sauce
- The juice and zest of 1 lemon
- 1 tbsp olive oil
- 1 shallot
- 1 EL Mehl
- 120 ml white wine or vegetable stock
- 100 Gram Fresh cream
- Heat olive oil in a pan and fry shallots for 2 minutes. Sprinkle with flour and fry briefly while stirring. Add lemon juice and zest and wine and simmer for about 5-7 minutes. Finally add crème fraîche and mix well.

Senfsauce
- 60 Gramm Mayonnaise
- 20 grams of Dijon mustard
- 20 grams of mustard, mild
- 15 grams of honey
Cilantro lime sauce
- 120 grams of sour cream
- 3 spring onions, finely chopped
- 1/2 bunch fresh cilantro, chopped (if you don't like cilantro, you can use chives instead)
- The juice and zest of 1 lime
- 1 garlic clove, finely chopped

- 100 Gramm Mayonnaise
- 100 grams of Greek yogurt
- 10 grams of mustard
- 20 grams of capers
- 3 pickles
- 1/4 bunch each of fresh parsley and chives
- 10 grams of sugar
- 1 tbsp olive oil
- Salt and pepper
