Your lavender is in full bloom and would you like to use some of it somehow? There's so much you can do with lavender flowers than just using them as a scent or spice in hearty dishes. Sweet dishes and even syrup can be made with the flowers, among other things. Or maybe you would like to make lavender syrup yourself?
Homemade lavender flower syrup can then be used for different purposes: you can make a simple lemonade, but it also works really well in cocktails for the summer. Whether in a saucepan or Thermomix, you are sure to like our lavender syrup recipes!
What do I do with lavender: How about syrup?
The following are two recipes with which you can make lavender syrup yourself - one that you can prepare on the stove in a saucepan and another for the Thermomix.
A notice:The recipes are intended for fresh flowers. However, if you want to make lavender syrup with dried flowers, you can simply reduce the quantities given as dried flowers have a stronger aroma.
Cook lavender-lemon syrup
- 2 bunches of lavender (harvested during peak bloom)
- 1 kg of granulated sugar
- 1 ½ liters of water
- 1 organic lemon
- 10g citric acid
And you can make lavender syrup quickly and easily:
- Put sugar and water in a saucepan and heat them up.
- Cook until the liquid becomes clear.
- Remove the pot from the heat and let the sugar syrup cool down.
- Wash the lemon thoroughly and cut it into slices, including the peel.
- Add the lemon slices, lavender and citric acid and stir.
- Let the syrup steep, covered, for two days.
- Boil it again and immediately pour it through a cheesecloth or fine sieve into sterilized bottles (rinse hot).
Make your own lavender syrup in the Thermomix
Lavendelsirup im Thermomixwith a pleasant lemon aromacan be obtained just as quickly and easily. Here too, it is important that you let the lavender flower syrup steep for a while after cooking so that the aroma can develop.
- 4 THE Lavendelblüten
- 400 g granulated sugar
- 300 ml water
- 6 tbsp lemon juice
You don't have to do much to make the perfect syrup, just:
- Add sugar, water and lemon juice to the mixing bowl.
- Cook for 10 minutes/100°C/speed 1.
- Add the flowers to the resulting lemon syrup and let them steep for a day.
- Bring to the boil again and pour into clean bottles through a cheesecloth or fine sieve.
How does lavender syrup turn purple?
Lavender flowers are beautifully purple, but unfortunately this color is not extracted into the syrup. If you cook the syrup with just the flowers, it will turn light brown and not what you would expect from lavender syrup. To make the syrup purple, boil it with anchan flowers (blue tea, butterfly pea flower), which turns the mixture blue. Then add a few drops of lemon juice. The acid in lemon juice turns the blue into purple.
Once you have prepared the aromatic syrup, you can use it to make really delicious drinks - both with and without alcohol. The easiest option would be to mix any amount of syrup with water or sparkling water to make onesummer lemonadeto obtain. Or try the following recipes with lavender syrup!
Cocktails for young and old
Whether alcoholic for the adults or virgin for the little rascals – a cocktail can be really refreshing on a hot summer evening. Prepare himfor a partyto or for yourself if you want to relax comfortably on the terrace.
Cocktail with lavender syrup and gin in attractive purple
For 2 glasses:
- 40 ml lavender syrup
- 40 ml Lime Juice
- 80 ml gin (vodka and tequila also work)
- 1 egg white
- Juice of ½ organic lemon
- optional ice cubes, lavender sprig and food coloring for decoration
Simply add all ingredients to a shaker and shake vigorously. Pour the finished gin cocktail through a sieve into cocktail glasses with ice cubes and serve decorated with a sprig of lavender and half a slice of lemon.
If you add purple food coloring, the cocktail looks even more interesting and is even more reminiscent of the beautiful and impressive lavender fields.
Non-alcoholic lavender cocktail with blueberries
For 2 glasses:
- 200 ml Lavendelblütensirup
- 100 g blueberries
- 200 ml tonic (or soda water)
The evening before: Put the blueberries and 50 ml of syrup in a bowl and mash the fruit roughly. Add the remaining syrup and let the mixture steep until the next day.
Put ice cubes and syrup (10 to 20 ml, depending on your taste) into the two glasses and fill them with the tonic. If you wish, you can garnish the glasses with half a slice of lemon. Feel free to leave a few whole blueberries floating in the glass.
Lavendel Spritz
For 1 wine glass:
- 125 ml Prosecco
- 125 ml sparkling water
- 20 ml lavender syrup
- Ice cubes
Put ice cubes in the glass and pour in the Prosecco, water and syrup. Stir everything and decorate with a lemon wedge and/or a lavender flower if desired.
Lavender Latte
To enjoy your homemade lavender syrup in a delicious lavender latte, you will need the following ingredients:
For 1 cup:
- 2 Espresso-Shots (60 ml)
- 1 to 3 teaspoons lavender syrup, depending on taste
- 1 cup (240 ml) milk
Directions:
- Heat the milk until hot, either with a milk frother or in a saucepan on the stove. If you heat the milk in the pot, then use a milk frother to make the milk frothy.
- Pour the espresso and desired amount of lavender syrup into a cup and stir briefly to combine. Pour the frothed milk into the middle of the espresso.
- Optionally, you can garnish the lavender latte with a pinch of dried lavender flowers.
