  • 250g white or brown rice
  • 500 ml water
  • 2 cinnamon sticks
  • 750 ml milk
  • 200g pumpkin
  • 1/2 TL Vanilleextrakt
  • 100g brown sugar
  • chopped pecans for garnish
  • 2 tsp pumpkin pie spice (optional)

Easy to prepare rice pudding with pumpkin

  • First peel, core and cut 200 g pumpkin into cubes.
  • Place the pumpkin pieces in a pot of boiling water.
  • Simmer over medium heat for 15-20 minutes until tender.
  • Pour off the water and puree the pumpkin.
  • Leave the pumpkin puree aside to cool.
  • Place the rice, cinnamon sticks and 500ml water in a medium saucepan and bring to the boil, stirring occasionally.
  • After boiling, cover the pot, reduce the heat and simmer the rice for 10-12 minutes until the water is absorbed.
  • Stir in the milk and pumpkin puree and turn the heat to medium. Let the pudding cook covered for another 10 minutes.
  • Add the vanilla and sugar and cook the rice pudding for another 20 minutes until it reaches a thick consistency. Stir it occasionally to prevent it from sticking to the bottom.
  • Once thickened, remove the rice pudding from the heat and remove the cinnamon sticks.
  • If using precooked rice, add it to the pot with the milk and pumpkin puree and cook over medium heat.
  • Garnish the pumpkin rice pudding with chopped pecans and serve warm or cold.
