Ingredients:
- 1 1/4 cups flaky shredded coconut
- 2 cups flour
- 1/2 tsp baking powder
- 1/2 tsp salt
- 1 cup softened, unsalted butter
- 1/2 cup sugar
- 1 large egg
- 1 TL Vanilleextrakt
- 1/2 tsp Coconut extract
- 60 candied chocolate eggs
preparation
- Preheat oven to 175 degrees. Spread the coconut flakes on baking paper and bake until golden brown, about 8-10 minutes. Allow to cool.
- Cover the baking tray with baking paper. Mix flour, baking powder and salt in a medium bowl.
- Cream butter and sugar in a large bowl with a mixer until creamy. Add the egg, vanilla and coconut extract and mix. Add the flour mixture and mix well.
- Form the dough into balls about 3 cm in size and roll them in the coconut flakes so that they are completely covered. Arrange on baking paper at a distance of 8 cm and press in the middle. Slightly lift the edges of the cookies to form a nest.
- Bake for 10-12 minutes until golden brown. Let cool on the baking paper. Place 2-3 chocolate eggs on top of the cookies before serving.
