Ingredients:
- 3 overripe bananas, mashed
- 3 Owner
- 80 grams of honey
- 80 ml canned coconut milk
- 1 TL Vanilleextrakt
- 60 grams of coconut flour
- 2 El Tapiokamehl
- 50 grams of raw cocoa powder
- 1 tsp baking powder
- a pinch of salt
- 60 grams of chocolate chips with at least 70% cocoa content
Banana bread Paleo preparation:
- Preheat the oven to 200 degrees and line a loaf pan with baking paper.
- Whisk all dry ingredients together in a large bowl and make sure to sift the coconut flour and cocoa powder beforehand.

- 40 grams of grated carrots
- 1 THE Chia Samen
- 50 grams walnuts, roughly chopped
- 1 THE Bananenextrakt
- 1 tsp cinnamon
- a pinch of nutmeg
- For the icing: 120 grams of cream cheese, 50 grams of soft butter, 50 grams of powdered erythritol, 2 tablespoons of whipped cream and 1 teaspoon of vanilla extract
Low carb banana bread preparation:
- Preheat the oven to 200 degrees and lightly oil a loaf pan.
- Place eggs, butter, heavy cream, erythritol and banana extract in a bowl and beat with a hand mixer until the sweetener is dissolved.
- Mix the dry ingredients and slowly add them to the wet ones.
- Stir in the carrots and nuts and mix everything together well.
- Pour the dough into the baking pan. Bake for about 50 minutes or until a toothpick inserted into the center comes out clean.
- Let the banana bread cool for about 20 minutes and in the meantime prepare the icing.
- Mix the butter, cream cheese and powdered erythritol with a hand mixer until smooth. Add vanilla extract and briefly beat again. Slowly add the whipped cream and process until smooth.
- Spread the icing on the banana bread and sprinkle with chopped nuts.
- Chill for at least 1 hour before serving.
