Gluten-free chocolate cake with avocado

Ingredients:
- 60 g Cocoa powder
- 120ml water
- 1 tbsp Vanilla extract
- 200 g finely ground almond flour
- 1/2 tsp baking powder
- 1/4 tsp salt
- 170g dark honey
- 120g coconut palm sugar
- 2 ripe avocados, pureed
- 4 large eggs
- 80 g chocolate chips
Preparation:
- Preheat the oven to 160°C. Grease a loaf tin and line it with baking paper.
- In a small bowl, add the cocoa powder, pour in the boiling water and vanilla extract and stir with a whisk. You should get a slightly runny paste.
- Sift almond flour, baking powder and salt into a large bowl.
- Place the honey, coconut sugar and avocados in a food processor. Process until the avocado mixture is smooth and pale green.
- Add the chocolate mixture to the food processor and pulse until well combined.
- Whisk the eggs and add them to the food processor. Pulse 3-5 times to incorporate into the mixture.
- Gently fold the chocolate-avocado mixture into the dry ingredients and add the chocolate chips.
- Pour the batter into the prepared loaf pan and bake for 50 minutes or until a knife comes out clean.The chocolate cakewill be a little wobbly. Allow to cool for at least 20 minutes before removing from the mold.
No Bake Double Chocolate Avocado Cake

Ingredients for the base:
- 250 g ginger cookies
- 50g dried coconut
- 150g butter, melted
Ingredients for the filling:
- 330g dark chocolate, chopped
- 3 ripe avocados
- 125 ml milk
- 4 tablespoons maple syrup
- 3 tablespoons cocoa powder
Ingredients for the chocolate ganache:
- 150g dark chocolate, chopped
- 3 EL Stage
Preparation:
- Grease a 20cm springform pan and line it with baking paper.
- Pulse the ginger cookies in a food processor until small crumbs form. Add the coconut and melted butter and combine. Pour the mixture into the springform pan and press it firmly into the bottom and sides of the pan. Place them in the fridge to cool for an hour.
- For the filling, place the chocolate in a heatproof bowl and place over a pan of simmering water. Stir regularly until the chocolate has melted. Remove from heat and set aside to cool.
- Add the avocado flesh to the food processor along with the melted chocolate and remaining filling ingredients. Blend until the mixture is smooth and well mixed. Spoon them into the springform pan and smooth them out with a palette knife or the back of a spoon. Place the cake in the refrigerator for 3 hours.
- Once the filling is set, prepare the chocolate ganache. Melt the chocolate and add the cream. Stir the mixture until smooth and incorporated. Spoon the ganache over the filling. Place the cake in the refrigerator for at least half an hour or until the ganache has set.

Ingredients:
- 120 g Allzweckmehl
- 100 g Cocoa powder
- 1/2 tsp salt
- 210g brown sugar
- 100 g granulated sugar
- 1 large avocado, pureed
- 4 eggs, room temperature
- 1 TL Vanilleextrakt
- 2 EL Kill
- 170 g chocolate chips
Preparation:
- Preheat the oven to 160°C. Grease a square tin, line it with baking paper and set aside.
- In a bowl, mix the dry ingredients (flour, cocoa powder and salt).
- In another bowl, whisk together the eggs, granulated sugar, brown sugar, vanilla extract, and oil. Add the pureed avocado.
- Mix the dry and wet mixtures until well blended. Fold the chocolate chips into the dough.
- Pour the batter into the prepared pan and bake for 50-60 minutes, until a toothpick comes out clean.
- Let the brownies cool for 10 minutes, then turn the pan out onto a wire rack. Once the brownies have completely cooled, cut them into equal squares and serve.
