Millionaires Shortbread Recipe: Bake the delicious caramel slices in the original or in a vegan version

Loose dough, aromatic caramel and delicate chocolate that melts in your mouth... All of this comes with the delicious millionaire slices. Anyone who follows “The Great Celebrity Baking” will not have been able to avoid it and, like most people, will have immediately developed an appetite for this cake. As you have seen, the preparation is not rocket science and can be done by anyone. Bake chocolate caramel cake without eggs

A layer of base, caramel cream on top and a chocolate layer at the end - that describes the millionaire shortbread visually, but you have to discover the breathtaking taste yourself because it is difficult to put into words. The butter in the bottom of the slices in particular ensures a great aroma. With the following Millionaires Shortbread recipe you bake about 36small pieces:

For the cake base:

  • 225 g Flour
  • 175 g kalte Butter
  • 90g sugar
  • 1 pinch of salt

For the caramel cream and chocolate:

  • 150 g Butter
  • 400 g condensed milk
  • 100 g Goldsirup
  • ½ tsp salt
  • 350 g milk or dark chocolate
  • optional: 4 tablespoons chopped and roasted hazelnuts for sprinkling

Preheat the oven to 150 degrees and line a square baking tray (23 cm) with baking paper. Prepare the Millionaires Shortbread Recipe:

  • Cut the cold butter into cubes.
  • In a bowl, process the butter cubes and flour into fine crumbs.
  • Also incorporate the sugar and salt to create a lumpy but well-processed texture.
  • Using a spoon, spread the dough onto the prepared tray. It should reach the edges of the sheet and become as evenly thin and even as possible.
  • Bake the base for 30 minutes, remove it from the oven and let it cool.

Shortbread recipe original – Cook the salted caramel

  • In a saucepan, bring butter, condensed milk, salt and syrup to a simmer over low heat, stirring continuously until butter is melted.
  • Then increase the heat and let the cream simmer, stirring occasionally, until it thickens and takes on the typical color of caramel, about 6 to 8 minutes.
  • Spread the salted caramel evenly over the cooled base.
  • Chill the cake in the refrigerator for an hour.

Recipes with caramel – the chocolate icing to finish

  • You can then add the chocolate layer at least an hour before serving.
  • You can do this by melting the chocolate in the microwave in 30-second intervals (stirring after each interval) or in a water bath on the stove.
  • Distribute the liquid chocolate evenly over the cold caramel.
  • Sprinkle chopped hazelnuts on top.
  • Once the chocolate has hardened (after at least 1 hour), you can cut the salted caramel shortbread into slices (9 large ones or up to 36 small ones).

Vegan Millionaires Shortbread recipe with nut butter

If you prefer it vegan, you can also choose the following Millionaires Shortbread recipe. Instead of regular butter, use vegan alternatives such as nut butter, while replacing the condensed milk with coconut cream. This is how you do it for about 18 slices:

For the floor:

  • 210 g Flour
  • 190 g vegane Butter
  • 90g powdered sugar
  • 1 pinch of salt

For the caramel sauce:

  • 255g any nut butter
  • 170 g Maple syrup
  • ½ TL Vanilleextrakt
  • 6 tablespoons coconut oil, melted

or:

  • 360 g of coconut cream
  • 220g brown sugar

For the chocolate icing:

  • 225 g vegan dark chocolate chips
  • 5 to 5 tbsp coconut cream (alternatively, plant-based milk also works)
  • optional: sea salt or coarse salt for decorative sprinkling

Line a baking tray (20 x 20) with baking paper and preheat the oven to 175 degrees. Prepare the Millionaires Shortbread Recipe:

Baking with caramel – the vegan base

  • In a bowl, beat the powdered sugar and butter until creamy.
  • Add flour and salt and stir into a smooth dough.
  • Press the dough evenly into the tray. It should be about the same thickness everywhere.
  • Bake the crust for 9 to 13 minutes, until the edges begin to turn golden brown.
  • Remove from the oven and allow to cool for 10 minutes before placing in the refrigerator to cool completely.

Millionaires Shortbread Recipe – The two caramel variants

Variant 1:

  • Simply mix all the ingredients together and spread them on the cold floor.
  • Place in the freezer for 15 to 30 minutes or until the top layer of the caramel is firm (the caramel does not need to freeze).

Variant 2:

  • Heat the sugar and coconut cream in a saucepan over medium heat, stirring constantly.
  • Once the mixture is boiling, reduce the heat and simmer the caramel for 7 to 10 minutes (it is ready when it pulls away from the sides of the pot and is dark in color).
  • Distributethe caramel sauceover the cake base and place in the freezer for 10 minutes.

The vegan chocolate icing

  • Heat chocolate chips and milk in a saucepan over medium heat.
  • Stir regularly until everything is melted and well combined.
  • Pour the glaze over the cake and sprinkle with grains of salt if desired.
  • Place the cake back in the freezer for 10 minutes (or in the fridge for longer if you're not in a hurry).
  • Cut the Millionaires Shortbread into slices.
