Pear dessert in a glass: Prepare autumnal desserts with caramel cream or chocolate sauce!

It's finally pear season again and we can enjoy this delicious fruit to the fullest. But of course it doesn't just taste great on its own. The pear is also very popular as an ingredient in savory dishes and not least for autumn desserts. Have you just bought fresh pears or collected them from the garden and would now like to prepare a delicious dessert? We could help you with two recipes for a pear dessert in a glass – simple, quick and delicious!

Honestly, who doesn't like caramel? And this wonderful aroma also goes perfectly with that of the pear, as we will prove to you. Our first recipe is for a pear dessert in a glassmy caramel cream. How to prepare it:

For 4 glasses:

For the caramel cream:

  • 450 ml Sahne
  • 80 ml milk
  • 5 egg yolks
  • 1 tsp salt
  • 1 TL Vanilleessenz
  • 100 g sugar (or less if desired)

For the poached pears:

  • 4 pears
  • 800 ml water
  • 200g sugar
  • 2 star anise
  • Juice of half a lemon

Optional garnish:

  • 100 ml Sahne
  • 50 g macadamia brittle, made into crumbs

The caramel cream for the pear dessert in a glass

Beat the egg yolks until well blended and set aside. In a medium-sized saucepan, mix the cream with the milk, salt and vanilla and bring the mixture to a simmer. In the meantime, you can also heat the sugar in a pan that you will use to make the caramel. Do not choose a heat that is too high and stir regularly as soon as the sugar begins to melt, even continuously, as it will burn quickly. As soon as the liquid takes on the color of amber, the caramel is ready and you immediately stir in the cream and milk mixture.

Continue stirring until any clumps of caramel have dissolved and then carefully pour the liquid into the egg yolks, stirring constantly. Then put everything back in the pot and heat the cream over medium heat. Now heat it until it is thick enough to no longer drip off the back of a spoon (if you have a thermometer: it should be ready at a temperature of 70 to 80 degrees). Divide the caramel cream between the four glasses and place in the refrigerator to cool and set.

Prepare the fruit

Mix cold water (not the water from the ingredients list, but separate water) and the lemon juice, peel the pears and put them in the water. The lemon juice is supposed to stop them from turning brown. Then take them out, dice them into roughly equal pieces and then put them back in the water.

Bring the water and sugar to the boil in a saucepan, add the star anise and after about 2 minutes also the pear pieces. Cook everything for about 8 minutes and then let the pear pieces cool in the syrup until serving.

Serve dessert with pears

You can prepare whipped cream immediately before serving by whipping the cream until stiff. Spread the pear pieces over the caramel cream and top with a dollop of cream. Then sprinkle the macadamia crumbs on top. The pears are readyDessert in a glass!

Chocolate pear dessert in a glass with vanilla ice cream and coffee flavor

For 4 to 6 glasses:

For the poached pear pieces:

  • 4 ripe pears (or approx. 450 g canned pear compote)
  • Juice of one lemon (if using fresh fruit)
  • 100g sugar
  • 1 TL Vanilleextrakt

For the chocolate sauce:

  • 200g dark chocolate, chopped
  • 120 ml strong, black coffee (e.g. 1 teaspoon instant coffee in 120 ml cooking water)
  • 90g sugar
  • 120 ml high fat cream
  • Vanilla ice cream

Optional garnish: sugar blossoms

Autumnal desserts – Poach the pear pieces

First, poach the fruit for the pearsDessert in a glass. If using fresh fruit, wash, peel, halve and core them and drizzle with the lemon juice to prevent discoloration. Put 200 ml of water in a shallow but large pan (the pear halves should fit in a single layer) as well as the sugar and bring to the boil. Once the sugar has dissolved, reduce the heat and allow the syrup to simmer for another 5 minutes before adding the vanilla.

Now put the pear halves in with the cut side down, increase the heat again so that the syrup comes to the boil and covers the pears. If this is not enough, you can instead use a spoon to drizzle the fruit over and over again. After a minute, reduce the heat again, put a lid on and let the fruit simmer for 10 minutes. As soon as the fruits appear translucent but are not mushy, they are ready and you can cover them and set them aside to cool.

If you use canned pears, just drain them.

Prepare the chocolate sauce for the pear dessert in a glass

The chocolate sauce for the pear dessert in a glass is quick and easy to make. Simply put the chocolate pieces in a saucepan along with the coffee and sugar and melt everything over low heat. Now stir in the cream and pour the sauce into a small jug.

Divide vanilla ice cream between the glasses, add one or two pear halves per glass and top with some chocolate coffee sauce. Decorate with sugar flowers or other decorations if you wish.
