Mirabelle plum recipes – Preparation of the plum cake
- Mirabelle plum cake with almond crumbles – top layer of cake: Mix softened butter and sugar. Spread the mixture on the bottom of your tin and let it bake in the preheated oven at 180°C for 10 minutes.
- Take the dish out of the oven and sprinkle it with flaked almonds. Wash, dry and halve the plums and remove the seeds. Place the sliced fruit in the mold and spread it in a single layer over the almond-buttersugar mixture. Set aside.
- Mirabelle plum cake with almond crumble dough: Beat the soft butter and sugar with a hand mixer until creamy. Add the eggs and mix everything into a smooth dough.
- Add the almond powder, baking powder, vanilla extract and milk. Whisk until well combined. Now add the flour. It is better if you add 1/3 of the flour and mix, then add another third of the flour and mix again. Finally, add the last third of the flour and mix until smooth.
- Since we are using fresh fruit, the plums need to be washed. Then cut them in half and remove the seeds. Pour the mixture over the plums in the mold.
- Bake the cake in the center of the oven (preheat to 180°C) for 30 minutes or until the top of the cake is golden and springy (when a toothpick inserted into the center comes out clean).
- Remove the cake from the baking tray and serve at room temperature.
If you wish, you can bake the cake on the grill for 5 minutes longer to allow the almonds on top to become golden brown.
