The situation is similar with the so-called monkey bread, which is actually a sweet yeast dough, but for which there are now also savory versions. Basically it is a sugar and cinnamon cake made from yeast doughfor plucking. Pieces are formed from the dough, which are then folded together to form a large pastry. Monkey Bread recipe with cinnamon, sugar and yeast
There is hardly anyone who can resist yeast dough and the combinationcinnamon and sugarjust makes the whole thing even more delicious. In addition, the preparation is not particularly complicated, so a test run is definitely worth it. How to prepare the juicy monkey bread recipe:
For the dough:
- 360 ml milk (warmed to around 40-45 degrees)
- 2 ¼ tsp instant yeast
- 625 g Flour
- 50g sugar
- 2 large eggs
- 70 g butter, melted and slightly cooled
- 1 tsp salt
For the syrup:
- 170 g Butter
- 250g sugar
- 130g brown sugar
- 1 tbsp cinnamon
- 1 TL Vanilleextrakt
Optional for the white glaze:
- 120g powdered sugar
- 3 tbsp milk
- ½ TL Vanilleextrakt
Prepare cinnamon cake from yeast dough
- Mix warm milk, sugar and yeast and let the mixture rest for 5 minutes.
- Add the eggs, butter, salt and 120 g flour, mix everything well with the dough hook and finally add the remaining flour. Continue stirring until the dough comes away from the sides of the bowl, about 2 minutes.
- Lightly flour your work surface and continue kneading the yeast dough there for 2 minutes.
- Lightly grease a bowl, place the dough in it, cover the bowl with cling film and let it rise in a warm place for 1 or 2 hours (it should double in size).
- Grease a bundt pan with butter or baking spray.
- Prepare the syrup by first melting 115g of the butter and mixing the cinnamon and sugar in a separate bowl.
Shape the dough
- Now shape the finished dough into small pieces (one at a time, not all at once!). In total you will need 40 to 45 pieces, so use them relatively sparingly (approx. 3 cm in size).
- First dip the piece of dough in the melted butter and then roll it in the cinnamon sugar to coat it on all sides. Place the ball in the molds and repeat with all the other dough pieces. If necessary, mix more sugar with cinnamon.
- As soon as the dough is used up, cover the mold with cling film and let the dough rise for another 20 minutes. During this time the pieces of dough should rise a little.
- Preheat the oven to 175 degrees.
Prepare the remaining syrup and bake
- Melt the remaining butter for the syrup, mix in the cinnamon and sugar and pour the syrup evenly into the mold and over the dough.
- Bake until golden brown, 34 to 40 minutes (if the top browns too quickly, you can cover it with suitable foil).
- Let the cake cool for 10 minutes and then turn it out onto a serving platter/cake plate.
- Drizzle glaze over top if desired. To do this, simply mix the ingredients listed. Although it is a plucked cake, you can also cut the monkey bread into cake pieces.
Recipe for Monkey Bread – hearty and without yeast

- 450g crackers/savory biscuits
- 55g melted butter
- 6 large eggs, lightly beaten
- 6 slices fried bacon, cut/torn into pieces
- 115g grated cheddar
To serve:
- 55 g garlic butter (preferably homemade from melted butter and ½ teaspoon garlic salt)
- for garnish: diced tomatoes and jalapeño
Hearty Monkey Bread Recipe – Preparation
- Preheat the oven to 175 degrees and grease a Bundt cake tin.
- Divide the crackers/cookies into smaller pieces and mix them in a bowl with the melted butter.
- Add eggs, bacon and cheddar and mix well.
- Pour the mixture into the mold
- Bake until golden brown, 30 to 35 minutes.
- Let the monkey bread cool for a few minutes and turn it out onto a plate.
- Brush with the liquid garlic butter.
- Serve with the tomatoes and jalapeño.
