Preparation:
- Cut the chicken breast into 3 equal pieces and season with Italian seasoning, salt and pepper.
- Heat 1 tablespoon olive oil in a large skillet over medium-high heat and brown the chicken for 4-5 minutes or until golden brown on both sides. Remove from pan and set aside.
- Heat the remaining olive oil in the pan. Add the garlic and paprika powder and sauté for 2-3 minutes.
- Stir in the chopped tomatoes and chicken stock and simmer for 4-5 minutes.
- In the meantime, cut the bacon into small pieces and fry it in a separate pan over medium heat until crispy.
- Add the cream, mozzarella and spinach to the tomato sauce, reduce the heat and simmer, covered, for 2-3 minutes until the cheese has melted.
- Add the bacon pieces and chicken back to the pan and simmer for 10-15 minutes.
- Serve immediately with your desired side dish and enjoy!
