Recipe for juicy orange bundt cake with chocolate and yoghurt

Important tip:To ensure that the cake comes out of the pan easily, you should generously butter and lightly flour it. Baking spray is not sufficient for this recipe!
Ingredients for the orange chocolate bundt cake
- 300 g flour plus a little more for dusting
- 1 teaspoon salt
- 1 teaspoon baking powder
- 350 g granulated sugar
- 230g unsalted butter, softened, plus more for greasing
- 2 tablespoons grated orange peel
- 1 teaspoon grated lemon peel
- 60 ml freshly squeezed orange juice, about 1 – 2 oranges
- 1 tablespoon freshly squeezed lemon juice
- 1 teaspoon pure vanilla extract
- 6 large eggs, room temperature
- 230g Greek yogurt, room temperature
Ingredients for the chocolate icing:
- 115 g dark chocolate (approx. 72% cocoa), finely chopped
- 120 ml Sahne
If you want to decorate your cake, you will need:
- Finely diced, candied orange peel or finely grated orange zest
Prepare the delicious orange gugelhupf
The first thing you should do is turn on the oven and preheat it to 165°C. You will then bake the cake on the middle rack. Then sprinkle your baking pan generously with butter and flour. Make sure you reach every crack in the bundt pan. To remove excess flour, tap the mold over the sink. Avoid skipping this step or substituting baking spray.
Then mix the flour, salt and baking powder in a medium bowl. Set the bowl aside. Also mix the granulated sugar,the orange and lemon zestin the bowl of a stand mixer fitted with the paddle attachment. Rub the sugar and peels together with your fingertips until the mixture resembles wet sand and is very aromatic. Add the softened butter and beat on medium-high speed for 5 minutes or until light and fluffy. Then add the orange juice, lemon juice and vanilla extract. Gradually add the eggs, reducing the speed to medium and beating the mixture until each egg is fully incorporated.
On low speed, add the flour mixture in three additions, alternatingwith two additions of yogurt.
Now fill the dough into the greased Bundt cake pan and smooth it out with a small spatula or knife. Place the cake in the oven and bake until the top is lightly browned, 55 to 65 minutes. Do the stick test: If a toothpick inserted into the center of the cake comes out clean, your orange bundt cake is ready. Allow the cake to cool completely on an oven rack for another 15 minutes before frosting.
Prepare the chocolate icing
Place the finely chopped chocolate in a medium bowl and heat the cream in the microwave in 20-second intervals until very hot and lightly steaming. After pouring the cream over the chocolate, wait a minute before stirring. Gently stir the mixture until it is glossy and smooth.
After the cake has cooled, spread the chocolate icing evenly over the bundt cake and let it drip generously over the edges. After frosting, tap the cake lightly to remove any air bubbles or wrinkles.
Allow the glaze to mostly set before adding candied orange peel or zest if you want to decorate the cake. When the glaze dries, the chocolate appears matte, making it easier to cut.
Serving tip:Dip a large, sharp knife into boiling water. Dry it with a clean cloth and then cut the orange bundt cake. Repeat this process before each cut to get beautiful slices on which the chocolate coating goes evenly.
Although the cake stays very moist for up to two or three days, it tastes best the day it is made. Cover and keep at room temperature.
