3 Ingredient Desserts: These yogurt cake and oatmeal cookie recipes are easy and delicious

3 ingredient desserts: Recipe for a delicious yogurt cake without flour, butter & oil

This yogurt cake is incredible with just 3 ingredientslight, fluffy and soft. It is a perfect and keto-friendly dessert for your family and friends.

  • 4 large eggs, separated straight from the fridge
  • 220g canned whole milk Greek yoghurt
  • 180 ml sweetened condensed milk (full fat)

To prepare, follow these steps

  • Preheat the oven to 180°C. Spray the inside of an 8-inch round cake pan with cooking oil spray. Line them with parchment paper. You can add handles to the bottom and sides so you can easily remove the cake after baking.
  • Separate egg yolks and whites. Place the egg whites in the refrigerator until you use them.
  • Place egg yolks, yogurt and condensed milk in a large mixing bowl. When measuring the yogurt, be sure to remove the excess liquid (yogurt often has some liquid/water in the container, you don't want any of that in your mixture). Whisk the ingredients together until fully incorporated and you have a smooth batter.
  • Take the egg whites out of the refrigerator. Place in another large mixing bowl. Beat on high until stiff peaks form.
  • Add a third of the egg white mixture to your yolk batter. Gently fold it in with a spatula until there are no more lumps of egg white. Since this dough is very runny, you will want to scoop up some of the dough from the bottom of the bowl each time you fold it in to ensure that all of the dough is mixed with the egg whites. Repeat with the next 1/3 and then with the remaining 1/3. Your dough should look light and airy.

Follow these instructions for the baking process

  1. Pour the batter into the prepared baking pan. The cake is baked in a water bath. To do this, place your cake pan in a larger baking pan that is at least 5cm deep. Place your cake pan inside the larger pan. Pour just enough water (cold tap water) into the outer mold so that the water level reaches 1.5 cm.
    Notice: Make sure you add the water to the outer mold after putting the cake in it. If you add it beforehand, the extra weight of the cake pan and cake batter will push the water level up by more than 1.5cm, which can cause the bottom of the cake to cook too quickly. This results in a dense floor. We recommend using a ruler to measure the water level.
  2. Place the cake in the oven with a water bath. Bake for 40 minutes. Then reduce the baking temperature to 350°F and bake for another 10 minutes. The cake should be risen and the surface should be dark brown. Turn off the oven but do not open the oven door and leave the cake in the oven for an hour.
    Notice: It is important to leave the cake in the oven (unopened) as this allows the cake to finish cooking and the gradual drop in temperature prevents the cake from suddenly collapsing.
  3. After an hour you can take the cake out of the oven. Use the handles to lift the cake from the pan and place it on a plate. Allow the cake to cool to room temperature. Then place it uncovered in the refrigerator for several hours (ideally overnight).
  4. Remove the cake from the refrigerator before serving. If desired, you can dust the cake with powdered sugar. You can serve the cake cold or at room temperature.

Notice: This 3-ingredient dessert is best made at least a day in advance as it needs to be refrigerated for several hours or ideally overnight; so please keep this in mind when preparing it for an event.

Ingredients:

  • 3 large ripe bananas, pureed
  • ½ cup (120 g) almond butter or peanut butter
  • 2 cups (180 g) oatmeal

Optional additions:

  • 70-80 g chocolate chips
  • 1 teaspoon vanilla extract
  • 1 pinch of sea salt

3 ingredient desserts – How to prepare the oatmeal cookies:

  1. Preheat the oven to 180 degrees Celsius and line a large baking tray with parchment paper (or spray with cooking oil).
  2. Puree the banana in a mixing bowl until most of the pieces fall out (it may be a little chunky).
  3. Add the peanut butter and oats and mix together until a sticky dough forms.
  4. Using a spoon, drop the dough onto the baking sheet and form as many cookies as you like (note that smaller cookies will require a shorter baking time). The cookies won't spread, so shape them the way you want them.
  5. Bake the cookies for 10 to 12 minutes, or until lightly golden brown around the edges.
  6. Let the cookies cool for at least 15 minutes before removing them from the baking sheet with a spatula and serving.

Notice: For sweeter cookies, use sweetened nut butter. For sophisticated, sugar-free cookies, use an unsweetened nut butter.
