To dehydrate you need a dehydrator. Cut the plums into thin pieces because the thicker they are cut, the longer it will take to dehydrate them. If you cut the plums into slices about 1cm thick, they will take about 12 to 14 hours to dry. Place the fruit in a single layer.
How to dry plums in the oven:
Preheat oven to 120 degrees. Cut the plums into pieces and place them cut side up on a parchment-lined baking sheet. Sprinkle generously with fresh thyme and let dry in the oven for 3 hours.
How to freeze the fruit

Ingredients for 8 preserving jars:
- 1 liter of plum juice
- 1.2kg sugar
- 1 bag of liquid pectin
Instructions for preparation:
- Prepare the mason jars by sterilizing them.
- How to prepare the juice: Cut fully ripe plums into pieces. Do not peel or pit.
- Mash fruit, add water, cover and bring to a boil over high heat. Reduce heat and simmer for 10 minutes. Squeeze out juice.
- To make jelly: Measure juice into a kettle and stir in sugar. Bring quickly to the boil, stirring constantly. Add pectin and heat again to boiling point. Boil vigorously for 1 minute.
- Remove from heat.
- Immediately pour the hot jelly into hot, sterile jars, leaving a 1cm headspace. Cook with boiling water for 5 minutes.
Simple plum cake

Sugar – 200g
Flour - 130 g
