Plum cake with puff pastry: The quickest fruit cake with and without pudding

There is a great alternative to make it easier for yourself and it is the quark and oil dough. But what if we told you that it could be even easier and faster? Yes, it really is possible and the result is really delicious. So if you're looking for a last-minute recipe or just don't feel like making a yeast dough, you can use this variant and get the perfect dough for plum cake without yeast without any effort.

Simple plum crumble cake from the tin

Should the cake also be visually reminiscent of the classic crumb cake with plums? Then you definitely need a recipe for sheet pan plum cake without yeast. Topped with delicious sprinkles, the alternative becomes almost like the real thing. How to prepare this dessert:

For one tray (approx. 12 pieces):

  • 1.2 kg plums (oralso plums); washed, halved, cored and quartered
  • 400g puff pastry
  • 60g melted butter
  • 75g sugar
  • powdered sugar

For the sprinkles (optional):

  • 150 g Flour
  • 75 g Butter
  • 75g sugar

Instead of sprinkles, simple almond flakes also work very well.

  • Preheat the oven to 200 degrees and line a baking tray with baking paper.
  • Roll out the puff pastry a little and place it on the prepared tray.

  • Bake the puff pastry for about 15 minutes.

Quick plum cake with pudding - this is how it's made

  • Put the plums directly into a bowl, squeeze the orange over them and mix in the spice mixture.
  • Preheat the oven to 180 degrees and grease the springform pan.
  • Place the puff pastry in the springform pan, pulling it up around the edges.
  • Prick the dough several times with a fork. This allows the hot air to circulate better and the dough to cook more quickly.
  • Bake the dough as it is in the oven for 15 minutes.
  • Take the dough out of the oven and spread the vanilla pudding over it.
  • Spread the plums over it and sprinkle them with the vanilla sugar.
  • Bake another 25 to 30 minutes. The plum cake with puff pastry is ready when the pastry turns slightly brown.

If you want, you can sprinkle the plum cake with puff pastry with powdered sugar before serving.

Cake with plums and cream vanilla pudding and brandy

Create a special flavor with brandy:

For one tray (8-12 pieces):

  • 375g puff pastry
  • 6 to 8 plums; washed, halved, cored and quartered
  • 30g brown sugar
  • 3 THE Brandy
  • 1 tsp cornstarch
  • 1 TL Vanilleextrakt
  • 1 egg yolk (size M), whisked
  • 200 ml high fat whipping cream
  • 1 tbsp powdered sugar
  • 200 ml of any vanilla cream/vanilla pudding

Prepare plum cake with puff pastry

  • Preheat the oven to 200 degrees and meanwhile leave the baking tray that you will use for baking in the oven.
  • Place the puff pastry on baking paper and cut it with a knife at a distance of 1.5 cm from the edge (do not cut through!) to make it easier to fold it over later.
  • Within this self-drawn edge, prick the dough several times with a fork.
  • In a large bowl, mix half the brandy with the sugar, cornstarch and vanilla and stir in the plums.
  • Place the marinated plums on a baking tray lined with baking paper (notthe tray from the oven).
  • Brush the edge of the puff pastry with the egg yolk and place it on the hot tray along with the baking paper.
  • Bake on the top rack for 20 minutes.
  • 10 minutes before the end of baking, put the plums in the oven on the lowest shelf.
  • Then let everything cool down a little and then cut the plum halves into quarters or eighths.
  • Beat the cream together with the icing sugar and the remaining brandy until stiff.
  • Add the vanilla cream and beat until stiff again.
  • Spread the puff pastry with the cream and distribute the plums over it. Complete!
