Recipe for snowflake cookies with mango buttercream

You can prepare the delicate and buttery cookies with just a few ingredients without much preparation or pastry skills. You are welcome to enjoy the cookies individually or stick them together with a delicious cream to make mini sandwiches. Maybe try the delicately melting cookies with an exotic mango buttercream.

Ingredients for 12 sandwich cookies

  • 80g sugar
  • 250 g Flour
  • 75g corn starch
  • 250 g soft butter
  • ½ vanilla bean or 1 teaspoon vanilla extract
  • finely grated zest of a lemon

For the mango buttercream:

  • 65g soft butter
  • 125g sugar
  • 2 tbsp mango puree (puree the flesh of a mango)

Preparation:

  • Preheat the oven to 160 degrees. Sift the sugar, flour and cornstarch in a large bowl.
  • Mix butter, vanilla and lemon zest in a separate bowl.
  • When the mixture has become creamy and soft, add the flour-starch mixture and mix everything well.
  • Finally, you should get a perfectly smooth, soft dough.
  • Form walnut-sized balls out of the dough and place them on a baking sheet lined with baking paper.
  • Dip a fork in flour and gently press each ball. The small cookies should be about 1.5cm thick.
  • Bake the cookies for 15 minutes. They should be light but dry to the touch. Let them cool completely. They become harder.
  • To make the mango buttercream, beat the butter, sugar and mango puree until smooth and creamy.
  • Then place a teaspoon of buttercream in the center of the cookie and carefully place another cookie on top.
  • Press lightly until the buttercream spreads almost to the edges.
  • Let the finished snowflake cookies rest in an airtight container in the refrigerator.

Prepare with chocolate

These snowflake cookies have the great texture of classic cookies, but get a luxurious touch with the addition of chocolate and cocoa. Here are the ingredients for the chocolatey snowflake cookies without cornstarch:

  • 250 g soft butter
  • 125 g powdered sugar, sifted
  • 2 TL Vanilleextrakt
  • 250 g flour, sifted
  • 45 g rice flour, sifted
  • 30 g dark cocoa powder, sifted
  • Optional: melted dark chocolate for garnish

Filling:

  • 100 g Butter
  • 60g powdered sugar
  • 100g dark chocolate, melted, chilled
  • Preheat oven to 160-180 degrees. Line 2 baking trays with baking paper.
  • Cream butter and powdered sugar in a large bowl. Add the vanilla.
  • Using a large metal spoon, stir the flour and cocoa into the butter mixture.
  • Using lightly floured hands, form dough into balls. Press down with a fork and bake for 15-17 minutes. Set aside to cool.
  • Mix the butter and powdered sugar in a bowl until smooth. Add the chocolate and stir.
  • Glue the biscuits with the cream into sandwiches. If desired, garnish the snowflake cookies with melted chocolate.

Prepare cookies gluten-free

The crumbly, slightly sandy and buttery snowflake cookies can also be prepared gluten-free. The buttercream with passion fruit creates a perfect contrast to the unique structure of the cookies.

Ingredients for 15 cookie sandwiches:

  • 80g brown rice flour
  • 80 g sorghum flour
  • 65g white rice flour
  • 75 g Maismehl
  • 250 g butter, soft
  • 2 TL Vanilleextrakt
  • 60g powdered sugar

For the filling:

  • 60 g butter, soft
  • 150g powdered sugar
  • 1-2 passion fruit
  • 2 tsp lemon juice
  • Preheat the oven to 160 degrees and line two baking trays with baking paper.
  • In a medium bowl, whisk together brown rice flour, sorghum flour, white rice flour and corn flour.
  • Beat butter, vanilla extract and powdered sugar at medium speed until fluffy.
  • Mix well with the flour. Flour your hands with cornmeal, form into balls, flatten with a fork and bake for 12-15 minutes.
  • While the snowflake cookies are cooling, mix the butter until creamy.
  • Add the powdered sugar, passion fruit and lemon juice and mix well.
  • If the mixture is too runny, add more powdered sugar. If it is too thick, you can add some passion fruit or lemon juice.

Prepare snowflake cookies vegan

If you avoid animal products, you can prepare the snowflake cookies vegan. They are in no way inferior to classic cookies. For 8vegan cookiesyou need the following ingredients:

  • 60 g Cashewbutter
  • 2 tbsp ground flax seeds + 3 tbsp water
  • ½ TL Vanillepulver
  • 1 teaspoon rice malt syrup or raw honey

For the filling:

  • 70 g of coconut cream
  • 2 tbsp cocoa butter
  • Lemon peel
  • 8 drops liquid stevia
  • Preheat the oven to 160 degrees and line two baking trays with baking paper.
  • Mix all the ingredients for the vegan snowflake cookies well with a wooden spoon.
  • Form 16 cookies, flatten them slightly with a fork and bake them for 15 minutes.
  • To make the filling, heat the coconut cream and cocoa butter in a small saucepan over low heat.
  • As soon as there are no more lumps, pour the mixture into a bowl and stir in the lemon zest and stevia.
  • Place in the fridge for 15 minutes to allow the filling to thicken.

Coconut and pandan recipe

  • Preheat oven to 180 degrees. Line the baking tray with baking paper.
  • In a mixing bowl, cream together the butter and powdered sugar.
  • Add vanilla extract and pandan essence and stir well. Then fold in the potato starch, flour and dried coconut and mix well until a soft dough is formed.
  • Form the snowflake cookies and bake for about 10 minutes.
