Autumn pumpkin cake with walnuts and icing: it couldn't be easier!

The American pie is without a doubt a real treat, but it takes a little more effort to prepare. That doesn't have to be the case. There are also simpler versions of a pumpkin cake with walnuts and you can get one of them from us today. Enjoy it!

No matter whether you have walnuts from your own garden and want to use them or buy some extra - this delicious pumpkin cake with walnuts is definitely worth it! Also, if you have leftover pumpkin from another dish, this cake isfor recyclingideally suited.

These are the necessary ingredients for the recipe

  • 200g pumpkin
  • 300 g Flour
  • 250g sugar
  • 120g walnuts
  • 100 ml Samenöl
  • 80 ml milk
  • 4 Owner
  • 1 TL Vanilleextrakt
  • optional: 1 teaspoon cinnamon

For the icing and decoration:

  • 100g powdered sugar
  • 2 tbsp freshly squeezed lemon juice
  • 4 walnuts

How to prepare pumpkin pie with walnuts

Preheat the oven to 180 degrees. Line a springform pan with baking paper or grease it.

  • Core and peel the pumpkin.
  • Cut it into smaller pieces. You also weigh out the pulp for the required amount.
  • Grind the pulp together with the oil in a blender. This way you get pieces of fruit in the cake. You can also cook the pumpkin pieces beforehand to make a puree (then add a little more flour to the dough later if the dough is too runny).
  • Roughly chop the walnuts and add them to the pumpkin, where you also grind them.
  • Set aside the crushed pumpkin with nuts.
  • In a separate bowl, beat the eggs with the sugar using a hand mixer until creamy.
  • Stir in the milk and nut pumpkin.
  • Sift the flour into the bowl and stir again.
  • Then add the vanilla and, if desired, cinnamon and stir.
  • Distribute the finished dough evenly in the baking pan.
  • Bake the pumpkin pie with walnuts for about 40 minutes.
  • Allow it to cool before removing it from the mold and decorating it with the glaze.

For the glaze and decoration:

  • First mix the powdered sugar with just a tablespoon of lemon juice. If the mixture is still too thick, add more.
  • You can add more liquid if necessary, but be careful not to thin the frosting too much. If this happens to you, thicken them with powdered sugar.
  • Pour the glaze into the center of the cake.
  • Using the back of a spoon, carefully spread it over the entire top. Also let them drip a little down the sides to make the cake look even more interesting.
  • Halve the walnuts and spread them along the edge of the cake.

Tips for variations

It's not just walnuts that are ideal for combining with pumpkin. Any other nuts such as pecans, almonds, hazelnuts, pistachios and the like are also a good alternative.

The cake is even delicious for breakfast. In this case, you can also leave out the glaze to take some of the sweetness out of it.
